Oh, Judy!  You crack me up!  Seriously?  You've never made a meringue for a pie?

Okay, here goes:  separate 3 eggs (that means separate the yolks from the whites).  Place the whites in a small mixing bowl.  (Save the yolks in a tupperware for use in something else later.)  Beat on HIGH speed using an electric mixer until whites start to get fluffy.  Slowly add the splenda* and 1 tsp. vanilla while still beating until whites will hold a stiff peak.

*I use that 1/2 splenda and 1/2 sugar, so I use 2 TBS of that.  If you are using straight splenda, I would use 2-3 packets.

LOLOLOL!!!  Well, you CAN cook it.  You can also eat it raw.  If you drop spoonfuls onto parchment paper (NOT wax paper), you can bake it like a cookie in a very low oven for several hours.  You'll have to google that one for meringue cookies.  I don't know the specifics.  I just always eat it right out of the bowl.

Really, you eat it raw?  I just assumed from your
first post you made it  and cooked it like you would
on a pie. Who'd thunk.   I don't bake anymore either.

Well, yes, really, I eat it raw.  Think about it.  When you put meringue on a pie, you only pop it in the oven for about 10 minutes.  Just enough to brown the top, and that's only to make it attractive.  I've never had a problem with it.

Hi Jo and my OFF family:

Getting on here late today. Didn't get up til 11:30 a.m. and am moving slowly. Had the night from hell last night ... late games and one that didn't get over until we were out (Cincinnati Reds) ... it was supposed to go on the front page and it was in extra innings and I asked the sports guy if he had a plan b ... he said no, it would be over by the time we needed it. I said it was in extras and they weren't scoring. So at 11 p.m., he decided to swap out stories and then I had to scramble. Swapped stuff on one page to the front, swapped another story on the other page; designer wasn't updating and he's so slow anyway.

Then after we were out, I had a slow server and couldn't post. Took a whole hour to post four stories online. I can usually do that in 10 minutes. it was so frustrating. I was tired and cranky and just wanted out of there.

So today, I'm doing nothing. Juliette is sitting next to me, chilling. I called one rehab facility and will tour it tomorrow. Trying to get ready for surgery and after.

Anyway, that's my day. Have a good one.

Eileen I feel your frustration!!! GRRRRRRRRRR had that tonight myself!! Tenant came in just as I was getting ready to leave...she asked if I could make her some copies so she didn't have to go to the library for that. I said ok...she left to go home across the street...I waited and waited and waited for her well after 1/2 hour I said forget it and left!!!!!! Not sure IF she ever came back or not as I am on other side of the street. She comes in tomorrow she better not say one word about me not being there!!!!!!!

Hope you find a nice rehab place and everything turns out great!!!
