ideas, please?
So as you know, my mother in law passed away yesterday. Services will be thursday night and friday day in central jersey, which is about an hour to an hour and a half from me. I need some food suggestions!
Here's the deal - we will be going back to my SIL's house after the funeral and interment and will liklely have a bunch of out of town family and local friends joining us. Elaine will be ordering (ugh deep fried) chicken breasts and bowtie pasta from a local deli that she likes. Katie will be making her famous "mafia ziti". I figured I'd make a huge bowl of the strawberry salad we had at the cooking class, but wanted to make a casserole or two. I'll also be taking some SF desserts to counteract the expected surfeit of creampuffs, napoleons, and other baked goods that this family likes.
Any suggestions for healthy casseroles that can be made ahead (thursday morning, probably), transported easily, reheated... not too carby? And ideally something that doesn't just "scream" I'm healthy - avoid me...in other words something really YUMMY? My brain hurts from all the other arrangements and I've come up with zero in the idea range for this part of the program.

AND... that just reminded me of the amazing buffalo chicken dip. Is that Pam's recipe? or??? Can someone send me that one because I'm sure I don't have it!

Well it's not "my" recipie per say, but yes, I have posted it. I'm honestly not sure of the exact amounts any more...I kind of eye ball it...
About three large boneless, skinless chicken breasts, either poached or cooked in the oven until done. Then cool and either cut into small cubes or shred with forks
8 ounces reduced fat cream cheese
1 to 1 1/2 cups ranch dressing (I use reduced fat for this recipie)
1/2 cup (more or less according to taste) of Wing sauce (I use Frank's Red Hot)
One package shredded cheddar or mexican blend cheese....whatever you like
Combine ranch, cream cheese, and wing sauce in a sauce pan. Heat over low to medium low heat until cream cheese is melted and all ingredients are well combined.
Add in shredded chicken and half of the shredded cheese
Pour into a baking dish and top with remaining shredded cheese
Bake until warmed through, bubbly, and cheese is melted. Serve w/ veggie and or chip dippers

Instead of complaining that the rosebush has thorns, be happy that the thorn bush has roses.
