favorite SIMPLE chicken meals?
When I make chicken breasts, I like to make extra which I then freeze (or refrigerate if I'm going to use them in a few days). Then I make a salad with spinach, tomato, veggies (I love to add grilled eggplant and squash if I've bbqed, or cucumber, red pepper, ...) and add the chicken breast and some balsamic low fat dressing.
I also marinate chicken in fat free Greek yogurt mixed with garlic and low fat italian dressing, the grill.
I've got more but have to look them up, tomorrow. Try CookingLight.com. They have a lot of great recipes. I love their magazine.

I was going through recipes online yesterday and found a couple of chicken recipes I printed out and tweeked. So when I go to the store I'll buy the items I know I can have and use in the recipe.
For instance Chicken Spaghetti!
I don't have the recipe, because it's basically making it like regular spaghetti and I'm sure you know how to make that right? But the ingredients I changed it to are:
Ground chicken
Shredded Mexican or Cheddar cheese (low-fat)
Wheat spaghetti pasta
onion
bell pepper
Organic tomato sauce
diced tomatoes in a can

I'll make Thai Chicken Curry using a jarred sauce, but you may not like that.
Chicken Enchiladas with Green sauce, this can be made without tortillas too. I just place chicken thighs (or your favorite parts) in a casserole dish with a can of green enchilada sauce, sprinkle with cheese and cook. If you want it with tortillas, I use the lowest carb, small size flour tortillas I can find. I use cooked chicken. Place about 2 oz of chicken in the tortilla with about an ounce of shredded cheese, roll up and place in casserole dish. Repeat. Once you've got all you want pour over the sauce and sprinkle with more cheese. Bake at 350 for about 30-40 minutes.
Similar dish; leave out tortillas and use your favorite spaghetti sauce, sprinkle with shredded mozarella and parm. Bake 30-40 minutes.
Chicken Florentine is another good one; any recipe online is good. I also like to make Waldorf Salad with chicken.

In the summer I mostly just marinate the chicken and grill it. But in the winter I love my crock pot!

SOOOPER SIMPLE!!! boil a Whole Chicken until its done - then just Chop it Up - while its cooking - chop up some Onion and Bell Peppers ( i like Green AND Red ) and then cook the Onion and Peppers in some Olive Oil until they are nice and done (with a little Salt & Pepper) then when the Chicken is DONE - just chop it up and throw it all together!!! Grrrrrrrrrrrrreat!!! i used to eat on Rice but now i eat it alone... you can do this with Pork also... Yummmmm!!!

salsa chicken in the crock pot! i use boneless skinless chicken breasts, cut up an onion, bellpepper, jalepeno if you like it super spicy!, jar of salsa poured over it, cook on low for like 6-8 hours or so. shred it with a fork. so yummy. you can eat it a lot of different ways too. taco salad, alone, over quinoa...
bbq chicken. boneless skinless chicken breasts, cover with low sugar bbq sauce, cook in crock pot for 6-8 hours or so. shred the chicken. you can eat it alone or over quinoa, on a salad, on a baked potato (dh eats it this way)...
white bean chicken chili - boneless skinless chicken breasts, onion, bellpepper, jalepeno if you like it spicy!, couple cans of white beans (great northern beans), one or 2 cans of rotel or diced tomatoes, 1 can of mexicorn, 1-2 cans of chicken broth, pack of chili seasoning. cook on low 6-8 hours shred chicken. sometimes i add sauted squash and zuchinni and black beans

try chicken in foil or parchment paper baked in the oven - comes out moist and flavored by what ever it steams with ie tomatoes and herbs, lemons and herbs, salsa, etc.
I like sauted diced chicken with a can of flavored diced tomatoes thrown in - chili starter, or italian starter
I agree with others on sauces - some buffalo wing sauces are low fat, trader joes has several good green salsas and indian curries that are good. I like to use enchilada sauce on chicken and turkey for tacos to moisten the meat up over taco mixes.

Slow Cooker Buffalo Chicken
- 4 skinless, boneless chicken breast halves
- 1 (17.5 fluid ounce) bottle buffalo wing sauce, divided
- 1/2 (1 ounce) package dry ranch salad dressing mix
- 2 tablespoons butter
- 6 hoagie rolls, split lengthwise
Directions
- Place the chicken breasts into a slow cooker, and pour in 3/4 of the wing sauce and the ranch dressing mix. Cover, and cook on Low for 6 to 7 hours.
- Once the chicken has cooked, add the butter, and shred the meat finely with two forks. Pile the meat onto the hoagie rolls, and splash with the remaining buffalo wing sauce to serve.
