I also get those 200-calorie microwave popcorn bags at Costco. Great snack, and some good fiber, too.
Try some dried apricots for a quick snack. A little high on the carbs, but no fat and a lot of fiber.
Then there's that "Muscle Milk" stuff, if you want to drink your snack.
