After I have ate these items I could get really sick to my stomach, I would become very cold, and start getting cramps. And usllay end up in the bathroom about 30 mins later...TMI I know. Sounds like you're reacting to the fat in some foods. When you have your gall bladder, it stores bile which helps you digest fats. When you eat something fatty, the gall bladder released a bunch of bile to help digest it. But now that you don't have your gall bladder, you don't have bile stored up to help digest fat.

No, dumping is a very specific physiological reaction to unprocessed sugar (which normally would have been partially processed by the bypassed portion of the intestine) in the lower intestine. Without your gallbladder, though, you can be more sensitive to fats and, to a lesser extent, carbs. Most of the items that you listed is either high in fat or carbs, so you will likely just have to be more careful about fat and carb content. (The sugar free items may be too high in sugar alcohols for your body.)
