I make mini quiches as well with a very similar recipe and they freeze fine

I have been making various versions of these after seeing the idea on Michelle's (Eggface's) website. I made a couple of hers (with minor modifications) and created some of my own based on what I had in the fridge. They are a great way to use up leftovers when there is just a very small amount!

Some of my favorites are a "crab rangoon" one with crab meat, cream cheese (a limited amount because of the texture of it), and green onion or scallions, a "Philly cheeseteak" one with leftover steak (or, usually, filet mignon), cheese, onions (and sometimes green peppers), and a "Denver omelet" one with ham, onions, green peppers,and cheddar cheese.

I put a much smaller amount of the egg mixture in the muffin cups because certain combinations cook better that way and I found it kept the bottoms from cooking too much (I hate overcooked, dry egg).  My end product is about an inch high, but two of them are usually enough for a meal for me.
