I did it on an electric grill plate.... But an oven or toaster oven on low low should do it fine.

You really do great and your pics are so yummy looking..i dont like eggplant but if you had a restuaraunt and had this pic under the title i would def want to try it..you should do like a bariatric resturaunt cookbook.

When I make bread crumbs I like to put the bread in the blender while its still fresh, then spread the crumbs out to dry in a very low oven for a few minutes. I think the crumbs stay a little larger more like Panko and make a better breading. I love eggplant! My "old" favorite was a grilled eggplant sandwich...soooo goood with sweet potato fries....!
