So while Reuben doesn't scream 4th of July, it was what I was craving.....
Turkey pastrami, Swiss and sauerkraut rolled together and fried in a pan to get ooey gooey crunchy.  Used some of Nik's "everything sa
uce"
http://bariatricfoodie.blogspot.com/2011/06/niks-everything- sauce.html
to dip it in, a little cherry tomato and romaine salad with my favorite Woodstock dressing.... sooooo yummy!

Awesome idea on the rueben!! Why oh why haven't we heard of that idea before!!?? I'm so excited I may have to stop at the grocery store tomorrow morning on the way home from work (I do nights) and have one for breakfast. BTW...add some scrambled eggs to it sometime, my breakfast rueben wrap I served at my coffee shop was my best selling Sunday morning brunch item. I know it sounds gross but the kraut, 1000 island sauce and eggs is an awesome explosion of flavor in your mouth.

Thanks for the carb free idea! Oh, and your salad looks great too!

Ahhh, how I don't miss nights :-)

The eggs are a great idea, I am holding out a bit longer, I had 2 really bad experiences with eggs early out, I am nervous to try them again....

Enjoy!
