so at my 1 month meeting with my doctor, someone had found some protein bread that is AMAZING!!! It is called "Julians bakery smart carb" bread...I like the #2 which is cinnamon raisin. I have been able to have crispy toasted bread, but never have because I need my protein, so this bread has 14g in 1 slice!! and only 2 carbs less than 100 calories...cant eat a whole piece, but about half of one :)

I was wondering about that bread. Keep seeing an ad for it on this site. I have to go way out of my way to get a loaf though, or order it on line. It will be awhile before I can have it but it would be nice to have a go to bread for sandwiches and toast. At one piece or 1/2 a piece at a time, a loaf is going to last a long time.

Bread freezes well but dries out in the fridge.

I love this bread!  I'm lucky that there is a natural foods store about a mile from my house that sells it.  I have a piece toasted for breakfast probably every other day.  I toast it straight from the freezer.  If I had more money, it would be the only bread I'd buy for my family.

Ok should have read this before i posted.  Does the toast remain it's integrity with the bread frozen?

It actually holds up really well.  I do have a "frozen toast" setting on my toaster, so I don't know if that helps or not.

I have also just taken a frozen slice out, wrapped it in a cloth napkin and microwaved it for 10-15 sec, and it thaws well that way.

My local WF carries it but i always pass it by because i can't image being able to eat enough of it before it stales to make it worthwhile.  How do you deal with this? Half a slice a day?  how long before you have to thra****
