Foodie advice needed- adjust meatball recipe how...?

Crunchy As Can Be
on 2/4/12 7:43 am, edited 2/3/12 7:44 pm - NY
I made meatballs last night for my fiance and dad-- I'd never done them before and didn't use a recipe, but they came out GREAT!

I used about 2 pounds of ground turkey
2 eggs
fresh chopped flat leaf parsley
fresh chopped basil
crushed garlic paste
salt
fresh ground black pepper
almond meal (almonds ground down to flour consistency)

Mmmmm!

(Funny thing is, I don't eat meat, but everyone else said they came out great and the house smelled amazing!)

Instead of breadcrumbs or eggs, you can use Baking Powder to bind meatballs, 1/2 Teaspoon per pound or so of meat.   I would use the lime but cut in in half, and I would do a balsamic vinegar reduction. That way you get the acid from lime and the balsamic along with the sweetness without the sugar.

If your going for sweet......like an above post suggests, maybe a sugar free bbq sauce.....me personally....I prefer my balls more savory. Sweet ones always remind me of those janky ketchup tasting happy hour ****tail kind probably out of a can......

I've done savory ones several different way......

- First, I prefer ground chicken for a beef/pork replacement....Much better texture/mouth feel.....kinda sausage like.

-As for dry binders....Dried Lavash Bread Crumbs, even a small amount of Panko.....parmigiana.

- Wet binders.....egg or egg beaters....haven't tried it yet.....but next time I think I'm gonna try a little Greek Yogurt in the mix....might make a more fluffy meatball?

One of my friends uses ricotta cheese for a wet binder- very tasty

I like to make mine with ground chicken.

ground chicken
onion
Italian seasonings
basal
garlic
salt and pepper
i add bread crumbs sometimes,
and  a few sprinkles Romano cheese

make them into nice round balls, drop them into boiling water.
they are done when they float.. this method is great for beef, (it gets rid of the fats in the meat.)
drain on paper towel
then add to sauce.  they soak up the sauce.

brown sugar splenda might work fo rmolasses. and a little oatmeal is probably better than bread crumbs. you can also use oat bran which has some carbs but is mostly fiber. or use a low carb tortilla ground into crumbs in the food processor. these are some things i do for meat loaf. and use some finely chopped celery as a filler instead of bread things.    Diane

I like the oat bran idea-
Do you think flax seeds would work?  I always have those around, but not usually oat bran.  I also now have wheat germ in the house- dunno.

All of you have given some great ideas.  For now I have 60 meatballs made so I am good for a bit,  but next batch I am going to play more and drop the molasses.  The splanda brown suger suggestion was a great idea instead of molasses by the way- my daughter loved it in the meatball sub last night so I could see her wantimg me to not deviate too much.
