Low Carb Meatloaf Recipe

Thought I'd share my own personal low carb, but high flavor meatloaf recipe!

1 pound 90/10 ground beef
1/2 packet of dry Ranch seasoning
1/2 cup condensed tomato soup
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 egg
1/8 cup water

Preheat oven to 350 degrees.

Spray the pan of your choice (muffin cups, bread pan, 8x8 pan, etc) with non-stick cooking spray.

Mix beef, Ranch seasoning, HALF of the tomato soup, mozz cheese, parmesan cheese, egg and water until well combined.  

Place mixture in pan and bake for 45 minutes.  (Note: muffin cups may require less baking time)

Spread remaining tomato soup over meatloaf and bake for another 5-15 minutes until done.


*Makes approx 6 servings (each serving is approx 3.5 oz).  Each serving contains 192 calories, 5g carbs, 10g fat, 20g protein.

I don't follow this recipe but I don't add any carbs to my meatloaf or meatballs and they stay together just great =)

sounds amazing! I put ranch seasoning in my meatloaf too:) It gives it a different, but good flavor. I may have to puree some lol!

Thanks!  I will do this tomorrow night!  Love the idea of muffin cups for portion control.
