I decided to buy some SF jello mix to go with my greek yogurt.  I love the cheescake flavor.  My question is what else does everyone typically mix in so that it won't be so thick? milk? water?

I wouldn't use water (personal preference)...try just a tiny bit of milk.
Or even better-----greek yogurt, sf cheesecake pudding and a pump of sf torani/davinci.  Like lemon, raspberry-----cheesecake! Pretty good in my book.

That is what I do too. You can freeze the greek yogurt and make popsicles too. I like the cheesecake, chocolate and lemon flavours. I will add cinnamon or caraml syrup. I am about to try orange syrup with the yogurt alone and freeze it for what I hope will taste like creamsicles. I just make a small batch at a time so I don't have to endure the same flavour for the whole tub.

I have a lactose allergy so I use vanilla almond milk either by silk or almond breeze.

I just keep adding small amounts of the mil****il i get it loose enough.
