Same as any other mushroom- these went into a crack slaw with nappa cabbage, ground venison, cilantro, hot peppers, and other veggies/fish sauce/spices. I like them sauteed in some butter and herbs, tossed into scrambled eggs, chopped into soup.. Puffballs take on any flavor you add/sauce.. like tofu, and chanterelles to me are best just staying very simple, they are the most tasty left unspiced. I love enoki in my soup, and beech mushrooms, and thankfully a couple international stores around us carry them super cheap.. I have yet to meet a mushroom I don't like. Just made a huge batch of "mini-mushroom pizzas" for a finger-food party at work last Fri.. pizza stuffing in baby brown shrooms, they went quick.
