Frisco-Guest Chef !!!

4.5 years ago I was 350lbs. and a barely walking time bomb...... I sought out a surgeon who could help me get my life back...... 

With my back against the wall..... I played my last card..... I paid a guy to cut most my stomach out.....

What was going to happen...... I didn't know.....

13 months later I weighed in at 148lbs. and my surgeon said..... "Stop, your done..... now keep at that weight for a year"

I can't tell you all the life changes that have happened to me...... some maybe I expected...... most I didn't.

Four times now I have given talks at hospitals to bariatric programs whi*****luded doctors, nurses and administrators.......... weird..... Yes.....the same guy that was eating Pizza and drinking a 2 liter Pepsi reading about WLS here on OH...... weird......

Soon after goal I started to learn how to cook as a matter of survival........ I studied from books, magazines, online, Food Network..... just started experimenting.....

I basically took the same steps I use in my work which are the same steps I used in racing and other interests ..... cooking is just another art form...... the creative steps are the same..... that's why they call it Culinary Arts I guess.....

So fast forward to today...... 

I'm invited to "Guest Chef" at a restaurant in Sitges Spain this summer !!!

They have certain Friday nights that the town restaurants all do Tapas dishes and the patrons go from restaurant to restaurant and taste small plates (and drink) very much a town party.

I'm still trippin on the whole idea....... but I think I'm gonna do it !!!!

See...... our small plate VSG foods ..... that someone on this forum calls "Toddler Plates" is called Tapas in Spain !!!!!

I'm thinking some types of Asian Fusion....... with Spanish and Italian influence !

Who woulda called that one 4.5 years ago !!!!

And for the record..... I'm not a Chef nor will I ever call myself one...... I'm a former fattie home cook that has a blog.......

Congratulations on what sounds like an awesome opportunity! I've always loved cooking (gee, maybe that dovetailed into my eating issues;). Since finding this website I've very much enjoyed not only your recipes, but your insights relative to the wls process. Enjoy!

  goal!!! August 20, 2013   age: 59  High weight: 345 (June, 2011)  Consult weight: 293 (June, 2012)  Pre-Op: 253 (Nov., 2012) Surgery weight: 235 (Dec. 12, 2012) Current weight: 145

 TOTAL POUNDS LOST- 200 (110 pounds lost before surgery, 90 pounds lost Post Op.diabetes in remission-blood pressure normal-cholesterol and triglyceride levels normal!  BMI from 55.6  supermorbidly obese to 23.6  normal!!!!

I have been to Spain and yes tapas are great, small dish with ham, shrimp, fish, olives, oh so good. You'll have a ball, enjoy.
