Ricotta Stuffed Strawberries - VSG Newbie Friendly!

I wanted to share a recipe for ricotta stuffed strawberries. The original recipes calls for chocolate chips but I don't add those because I will get carried away! I also don't bother actually stuffing the strawberries. I just make the ricotta mix and then chop up strawberries to throw on top. For those who are in the mushy phase you can eat without the strawberries. I remember my surgeon telling me I could eat Ricotta cheese but I didn't know what to do with it so I hope this helps!

Ingredients: 10 strawberries

1/4 cup Light/Low-Fat Ricotta Cheese

2 No-Calorie Sweetener packets

2 drops Vanilla extract

3 teaspoons mini Semi-Sweet Chocolate Chips (optional)

In a small bowl, mix Ricotta, Sweetener, and Vanilla Extract until uniform.

You then can either pipe into pitted strawberries or just eat with strawberries on top like I do. Finish off with chocolate chips if you like. It's really yummy!

This looks fantastic...however, I have issues with strawberries, they really hurt my stomach. Actually, I have problems with most fruits hurting my stomach still. Does anyone else have this?

I would think that the seeds in the strawberries would be an issue until you're healed?

I think strawberries may be contraindicated for the recently sleeved due to the seeds.  The recipe sounds good (in fact, I'd eaten these long before surgery), but most NUTS don't recommended fruit so early in the process.  

I'd be careful if you've recently had VSG and are thinking about eating these.

Strawberries have tiny seeds that are terrible for your staple line- I was told to not eat them for at least 6 weeks.  Recipe sounds nice though!
