Weekly meal plan!

I'm still in pureed foods, but on Thursday I get to move to soft solids!  I'd be more excited if I had an appetite.  

Here's my meal plan (dinners) for the week.  I'd love to see what you're planning for your week!  

1. Slow Cooker Red Beans and Rice (The rice is cooked separately so I'll omit it for myself and puree the red beans and sausage part.)

2. Chicken Pot Pie (I'll puree the stuff under the pastry.)

3. Lentil Sausage Soup w/ rolls (I made this pre-op and froze a lot, I made it with extra sausage so it'll be nice and proteiny and easy to puree!)

4. Waikiki Meatballs (These are made with ginger and good spices and have a sauce that includes pineapple.  I serve them with rice, but I'll just be pureeing the meatballs and some of the sauce for myself.)  

5. Leftover Night (I have choir once a week, so it's always leftover night.  I used to stop by Wawa on the way home for a post-choir hoagie, but I don't do that anymore of course!)

6. CHIPOTLE (This is my first night of soft foods and, dammit, I want Chipotle.  I'll be ordering a burrito bowl sans rice and lettuce.  It will be glorious.  It better be, since I'll be eating it for DAYS.)  

7. Slow Cooker Corned Beef w/ garlicky sautéed cabbage w/ rye bread (My corned beef turns out nice and soft in the slow cooker, so we'll see how this works.  I figure I'll have a bite of the cabbage and, of course, none of the bread.)

My menu for the week is:

Breakfast = Crustless Spinach Quiche
Lunch = Thai Coconut Curry Chicken
Dinner = Taco Meat (will use romaine lettuce for the "shells"); Mexican "Rice" (it's a cauliflower recipe I'm trying to accompany my tacos)
Dinner = Marinated Chicken Breasts in italian dressing with side salad

I usually plan 2-3 options for dinner so I can alternate.  Since I have the same thing for breakfast and lunch I like to change it up and have a different dinner.

Let us know how the cauliflower rice is!  I've seen a lot of recipes for variations that sound like they could be tasty.

I have "medium" hopes.  I have a friend who made cauliflower "rice" and it reminded me more of couscous, so I'm going to old fashioned grate it and not make it as fine.  I'll definitely let you know =)

My meal planning is different b/c I have to travel so much.  I think I have a couple of recipes that will travel ok and taste fine reheated in the microwave.

- while I'm on the road I will have buffalo chicken meatballs w/ carrots and kung pao chicken and will alternate

- when I get home I have some chicken cauliflower buffalo bake & cheesey chicken quinoa bake 

Next weekend I'm going to make a 'mock lasagna' w/ spaghetti squash, turkey, ricotta and mozzarella.  I'm looking forward to that :)

I am starting my pre-op diet on Thursday. Not strenuous, really, just a very low-carb diet: less than 30g carb, at least 70g protein, minimal fats.

So . . . lots of roasted chicken thighs, broiled salmon, string cheese, scrambled eggs, and much less asparagus, spinach, and brussells sprouts.
