Stacy, I'm like you with forgetting my vitamins.  So I bit the bullet and bought several bottles.  I keep them in my purse, at my work desk, in the car and at home.  That way, when I remember, I have one handy!

I took a piece of parchment paper and cut in a circle to match my microwave turn table. I then put cheddar cheese cubes (I got them from Aldi's) in a circle around the paper (9 total) and microwaved for 2min 10 seconds. I then pulled them and laid on paper towels to drain and cool. I then put into a ziplock (they keep for about a week, no fridge required).

I used the parchment over and over until I did the whole bag. I eat about 7 for a snack.
