My rant about eggs and cottage cheese
I was in Walmart this morning searching for the reclusive high protein, low sugar, low fat foods and came across the egg section. I tried 3 bites of egg last week, and let's just say, it wasn't pretty, on either end! So I thought, maybe I'll try egg whites since I had been able to tolerate hard boiled eggs.
I grabbed a box of eggbeaters and was so happy to see 0 fat. Thought, hmmmmm, I wonder how much fat is in a regular egg. See the note above for what I said, outloud, amongst other happy shoppers who looked at me quite oddly.
I feel so mislead. I thought eggs were supposed to be good for us? Why have I been pushing my kids to eat more eggs instead of the 1.5g of fat cheerios that they are asking for? I'm a horrible mother!!! lol

And, to wrap it up. Am I the only one who thinks cottage cheese is absolutely nasty????

Eggs
Egg yolks are home to tons of essential but hard-to-get nutrients, including choline, which is linked to lower rates of breast cancer (one yolk supplies 25% of your daily need) and antioxidants that may help prevent macular degeneration and cataracts. Though many of us have shunned whole eggs because of their link to heart disease risk, there’s actually substantial evidence that for most of us, eggs are not harmful but healthy. People with heart disease should limit egg yolks to two a week, but the rest of us can have one whole egg daily; research shows it won’t raise your risk of heart attack or stroke. Make omelets with one whole egg and two whites, and watch cholesterol at other meals.

LOL...you are too funny! I tried to eat scrambled eggs and they were good for a while after surgery, until the day I ate them too fast and they turned into a rubber bouncy ball in my pouch~~~pain and agony for hours. At least I got an unscheduled nap that day since I couldn't stand to be upright from the pain!
I also like cottage cheese...but the texture can get kind of yucky. My new favorite is to peel the skin off an apple and cut up 1/4 of an apple into little chunks and mix it with the cottage cheese and some Mio or crystal light. You get the crunch of the apple chunks and not the slimy, gelatinous globules of cottage cheese!
Cottage cheese, well, I did eat it during soft food and I like to cook with it but that is about it.

Along with milk, eggs contain the highest biological value (or gold standard) for protein. One egg has only 75 calories but 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids.
The egg is a powerhouse of disease-fighting nutrients like lutein and zeaxanthin. These carotenoids may reduce the risk of age-related macular degeneration, the leading cause of blindness in older adults. And brain development and memory may be enhanced by the choline content of eggs.
The ONLY reason I do not eat real eggs is that I can not eat the yolk of an egg...allergic to it. (Sensitive, actually). I would love to be able to eat eggs.
