Lunch ideas
Maybe when you cook dinner you can make extra and then have it for lunch the next day. I usually will get in a cooking mood and make lots of food and then freeze it for times when I don't feel like cooking. I am looking for some more recipes now. My go to meal has been a taco casserole that I found on Bariatric Foodie. I usually double the recipe and use 3 lbs of ground meet instead of 2 for extra protein. I love that stuff. I could eat it every day.

My husband has been travelling a ton for the last month so I haven't cooked much. I hate to cook anyway, so it's a good excuse not to. He has one more trip this next week and will be home for a bit. I will definitely try some of the recipes on Nik's site. I have eaten chili like 3-4 times a week since I could tolerate it. Surprisingly I haven't gotten sick of it yet. But I made the mistake of putting fritos in it and now I can't stop. Frito pie has been a go to food for me since I was a child. I need to jump off this carb train! It is headed nowhere good.
Give cottage cheese a break for a while and try again. I found I loved it even more when I did that. Try some chopped up red onion, tomatoes, peppers and broccoli with a tiny bit of ranch dressing or dip powder in it. It's fantastic -- reminds me of veggie pizza.
