I did meatballs a lor for work early out.....buy them frozen and make in crockpot....I bought a mini crockpot and just added a low sugar spaghetti sauce and I was good to go. Started with two meatballs and gradually increased. The egg and chicken salad also work great as others suggested as well as greek yogurt...I love SF white chocolate pudding mix in mine....yummy!! I also did canned chili too in the beginning but havent had iot for months. I am making a mini meatloaf now in my crockpot today.

I'm a creature of habit and eat the same thing for LUNCH everyday.

1 stick of Pepper Jack Cheese
1/2 Gala Apple
5 - Ritz crackers (yes, I know it's carbs but it's my treat for the day)

I love leftover meatloaf, BBQ chicken and have just recently fallen for fajitas.

My go to snack is Toffee flavored almonds YUM!  (I limit myself to 1 oz a day)

My evening snack is sugar free hot chocolate.

I carry a small lunch sized ice chest with me every time I leave the house.

Hope you find some tips you like.

I don't really have a recipe per say for the meatloaf. I usually make 1/2 pound lean
hamburger with a small amt egg beaters along with italian seasoning and a small
amt of breadcrumbs and dried onion. Basically use any meatloaf recipe and cook in
crockpot. I live alone so the mini crockpot comes in handy. I use the crockpot as the
meat stays moist....when I made it in the oven it was too dry and didnt go down right.
I cook it for 3 hrs in my mini crockpot. This makes two meals for me...used to be 4 but I
am a year out so can eat larger amounts now. You can use any meatloaf recipe...not sure
how long to cook in a regular size crockpot. I also mix a small amt of catchup with
worcestershire sauce and put on top 30 min before it is finished.

Good luck and experiment..I started cooking again about 4-5 months out...also check out
bariatric eating....they have an egg bake recipe that I make A LOT! LOVE it.

sorry to keep bugging you.   I have never cooked anything that didn't have liquid in it in a crockpot.  I use mine for beans, soup, chili, etc.  You just put the meat loaf in without liquid?  Wow!  Cook for 3 hours on what temp?  I made meatloaf in the oven last week using lean ground beef.  It was so dry I couldn't eat it all.  I threw it out!

You are not bugging me. I bought one of those little dipper crockpots as the amts I could eat were so small....it doesnt have a temp so I cannot give you a temp to guide you at. I would suggest on low and cut into it after about 90-120 min, I cook mine for 3 hrs in the little sipper. Like you the oven made it too dry.....I also recently made taco meat in there and it was SO moist. And yup, no fluid put in with the meatloaf....there is plenty of moisture in there...I do spray it with pam beforehand to make sure it doesnt stick. The bigger the meatloaf the longer you will need to bake it. Give it a try....meatballs and meatloaf were my standbys for awhile. I tend to eat the same things for awhile as I hated the foamies and liked to know that something would go down right ESPECIALLY at work. LOL.

 I have a little dipper I use for nacho and chocolate sauces for dinner parties.  I'm going to try it!  Thanks.  It's my husband and me, but he travels a lot so this perfect when I'm home alone.

Yeah! You have a little dipper. Start with 1/2 poung ground beef and make a meatloaf however you like it....shape it and cook 3 hrs....very moist (I sometimes have to scrape a little fat off the bottom). Leftovers are often too dry after a few days so this is why I like making small things like this. I also missed cooking post surgery. A 1/2 pound loaf for you may be 3-4 meals. LOL.
