Pretty Simple & Tasty Breakfast Recipe

For those who are missing their comfort food (me too, sometimes), here's a pretty simple & tasty breakfast recipe I use about once a week:

1 Tbs Olive Oil (cooking spray is ok too)
3 Turkey Sausages (Banquet)
1/3 Cup of Egg Beaters
1/3 Cup Shredded 3 Cheese Blend
1-2 Tbs of Mild Salsa

Defrost the sausages in the microwave for 2 minutes
Cut them into narrow pieces on the bias (angular)
In a small non-stick pan set to med-high heat, add oil and sausage pieces
Saute for about 2-3 minutes with frequent stirring
Add egg beaters and continue to stir (may need to reduce heat a bit too)
When it's about 90% cooked (no more runny stuff) add the cheese and continue to stir

Put into a small bowl and top with the salsa. This is actually enough to feed me with a few bites of leftovers, or just enough to share with my 2 year old.
