Mmmmm, Egg Salad with a Twist!

Now that I'm well healed I've started introducing more solid foods into my diet. This week it was hard boiled eggs. I tried eating them plain for a couple days just to see if I was ready for them and I was! So the next step was to make an actual meal out of them instead of just eating them as a snack. So I mixed up some of my favorite sandwich type food. It's egg salad with a twist. I add in some imitation crab chunks along with low fat mayo. It's easy!

2 Large Hard Boiled Eggs
1/2 Cup of  Imitation Crab or Lobster chunks
1-2 Tbl spoons of Low-fat Mayo

Peel the eggs and rinse with cold water to make sure you have all the shell cleaned off,
Place them in a small bowl,
Add the other ingredients,
Smash it all together with a potato masher
Cover and refrigerate for 1/2 hour before eating to allow the flavors to meld together

I eat mine either on a small bed of fresh spinach, or on an Oroweat Sandwich Thin (whole wheat). It's very tasty!
