Roasted Red Pepper Dip

Great with veggies, whole wheat crackers or as a topping on a turkey sandwich.

1 7 oz jar of roasted red peppers
2 cloves of garlic
1 tsp worcester sauce
1 tsp lime juice
1 cup ff sour cream
4 oz ff cream cheese (softened)

combine first 4 ingredients in a processor or magic bullet and process until smooth.  Mix sour cream and cream cheese until smooth and mix together.  Delicious.

Carrot Cake

8 egg whites
1 cup Rolled Oats
1/2 cup cottage cheese, fat free
4 scoops Any Whey protein powder
2 teaspoons baking powder
2 tablespoons vanilla extract
½ cup splenda
3 teaspoons cinnamon
1 cup grated carrots
1/3 cup crushed pineapple -- drained

Optional (not included in cal calc)
2 tablespoons raisins -- optional
2 tablespoons almonds -- or walnuts, optional


*Very good with fat free cream cheese frosting recipe from Spark Recipes on top!!

Directions

 
Combine Egg Whites and next 7 ingredients (Egg Whites to Cinnamon) in a blender. Blend in a blender. Gently fold carrots, pineapples, nuts and raisins.
Spoon batter into muffin pans coated with cooking spray, filling ¾ full. Bake at 375 degrees for 30 minutes or until golden. Remove from pan immediately.

My Meat Loaf

1 large diced onion
2 whipped eggs
1 cup crushed bran cereal (cereal is a super low sodium and fat alternative to my traditional 20 whole wheat crackers)
1 package dry onion soup mix
1/2 cup sugar free ketchup
1/2 cup plum sauce
2 lbs extra lean ground beef

mix together and bake for one hour on 350

Protein Pumpkin Pie Recipe

Ingredients:
22 Fl oz can pure pumpkin
6 scoops vanilla protein powder (mine has 130 cals, 23 protein per scoop)
12 oz can evaporated skim milk
6 large eggs
3/4 cup sugar twin brown sugar substitute
1 tbsp cinamon
1/2 tsp ginger
1/4 tsp ground cloves
1/4 tsp nutmeg

Pre heat oven to 400. Mix sugar and spices in a small bowl, set aside. Lightly whip 6 eggs in a large bowl, add in pumpkin and mix thoroughly before sprinkling in sugar mix. Blend protein powder and milk in a seperate bowl with a hand mixer, then add to the pumpkin bowl mixing well before filling 18 lightly greased muffin tins. Bake at 350 for 10 minutes, reduce heat to 300 and cook for 40 - 50 minutes. Pies are cooked when a knife is inserted into the middle and comes out clean.

This works out to 12 grams protein and 100 cals each, plus whipping cream for another 25 cals and 1 protein I call this a masterpieceofpie :)
