Meal and snack ideas

I'm a little over a year post up and am struggling to make good food choices lately. I know most of the problem is that I'm tired of eating the same foods and need to get more creative. Does anyone have any recipes that are fairly quick and easy? I work and am not a great cook but I'm willing to try. I don't want to slip back into my old way of eating.

I think a good place to look is the daily menu threads on the RNY and VSG Boards. You can see what other people are eating. If you ask someone for the recipe for something that looks interesting they will usually oblige.

It is good to change it up, we get into a rut.

I've been enjoying a Pork Carnitas-type recipe lately. I make it in the Instant Pot pressure cooker, but you can make it stovetop or crockpot too...

Take about 2 to 2 1/2lbs of pork loin- cut into large chunks as in 3 or 4 pieces per loin.

Brown meat in batches. Season with Medium amount of adobo, small amount of cumin and heavy amount of chili powder. Add one cup or more of green salsa verde. (one cup for pressure cooker or crockpot, more for stove top.) I pressure cook 45 minutes. and natural release. Other wise just coo****il shreddable.

Add more salsa if desired.... I just eat plain but you could use for tacos, lettuce wraps other recipes...so good.

Ditto above posters. I use my crockpot about twice a week. It is so easy to cook. I eat the same thing for a couple of days and freeze a couple meals in sandwich size baggies. Make sure you label them. I use the daily menu threads, a book called, "The Daniel Plan" and an Atkins cookbook. I let my daughter, her husband and my husband go thru the books and pick out a receipe they want to eat and then I cook it for Sunday dinner. That way I don't keep picking the same things.

I'm just a newbie, but I bought a spiralizer and really enjoyed some zucchini noodles one day last week. You can add any meat/cheese/low carb sauce you like to it.

I used to like cauliflower "rice" before surgery but haven't had it since surgery because I never have room for it after eating my protein. There are loads of cool recipes that are bariatric friendly on Youtube, posted by members of the weight loss surgery community.
