Maintaining Away!

Well, it is January 12, 2010. Almost two years out and I am still weighing in at 140. The high end of my weight is around 143. I am still loving my RNY. I think at times it is broke, then get a cruel reminder (ie dumping or throwing up) tha tthe pouch still rules all!

Still Maintaining

Ok, I am doing well! Have been able to maintain my 140 pound weight now for a bit. I am officially in size -8 pants. The only time I had any issues was when I was very, very late for my period, and gained 6 pounds. As soon as I started, I lost it though. Life has been good! I love my RNY!!!!!!!!!

Tomato Pie

Tomato Pie
Ingredients
  • 4 – 5 tomatoes, peeled and sliced
  • Pesto (you can buy or make it see recipe below)
  • 1 (9-inch) pre-baked deep dish pie shell (I don’t use a pie shell)
  • 1 cup grated mozzarella
  • ½ cup parmesan cheese
  • 8 slices provolone cheese
  • Salt and pepper
Directions


Preheat oven to 350 degrees F.
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, then pesto in pie shell, season with salt and pepper. Sprinkle parmesan cheese, mozzarella cheese and then place provolone cheese on top, and then start another layer with tomatoes. (Kind of layer like lasagna) ending with cheese on top. Bake for 30 minutes or until lightly brown.


To serve; Let cool a little, cut into slices and serve warm.

Cobbler- yummo!

Fruit Cobbler

Yellow plums (about 10 small size)
Red plums (about 3 medium size)
Peaches (3 medium)
Cherries (about 1 cup - I threw them in frozen)
Flour

Core and chop the fresh fruit and place in a glass baking dish, add the cherries and a couple tablespoons of flour (to thicken the juice).

Topping
1 cup old fashioned oats
1/2 c unsweetened shredded coconut
2 T brown sugar (or Splenda brown sugar, whichever you prefer)
1/4c chopped almonds (or any nut would work)
3 glugs SF syrup (I used hazelnut)
salt
spice (either cinnamon or I used Pumpkin Spice) 

Mix all ingredients except syrup and spice.  mix dry ingredients, then add syrup and mix until crumbly (the syrup acts in the same way as butter would in a traditional cobbler).  Once mixed, add to the top of the fruit.  Sprinkle with Pumpkin Spice or Cinnamon.

Optional -- I've made this similar cobbler topping with a scoop or two of protein powder, so if you want to add a healthy boost to this, go ahead and add in some vanilla protein powder. 

Bake at 350 for about 30 minutes or until crust is cripsy.

Been a while since I posted!

Ok, as of this morning I weighed 140. I think this is going to be my weight to be maintained. I am almost at goal (135). However, when I look in teh mirror, I am so happy and fulfiled with what I see. I continue to weigh daily and watch what I eat. I have found carbs again and I love them. If I am not careful though, they show up on the scale. And, Ihave found my arch nemisis again- snacking at night in bed. So, I have vowed to only snack on protein things when  reading such as beef jerky, nuts, etc... Sure takes the fun out of snacking now. But, that is how I got fat. That and a lot of other bad habits. I am still severely lactose tolerant. I will try ice cream every once ina while thinking it is not so bad to be sick for a while, then totally regretting it. However, chocolate ice cream calls to me at times. I also found that I can no longer be a sun bunny like I used to as I tend to get dehydrated very easliy and I have a few days that I need to recover. So not worth it. My fav food still is steak- cooked medium rare. Yum. And I wear a size 6 clothes. I just put ona pair of size 8 pants this morning and had the baggies around my crotch. Wow- who would have ever thought my clothes would be too loose instead of too bulging tight? Not me.

Monday AM again!

Well, I weighed in at 149. Tuesday, I weighed in at 150. However, I do feel like I am smaller. Went to Wally World yesterday and officially I am size 10. Any size 10 I got off the rack fit nice. Yea for me! Would love to have that TOM, drop 5 pounds and keep it off for good!! We will have to see. I saw my sis and mom this weekend and both said I looked "skinny". It is so nice to hear. We had Field Day last Friday so I should be adding some more pics. I look wind blown and ragged I am sure, but they should be interesting. Have I mentioned I love my RNY? I do!

Shelly's Pretty in Pink Strawberry 5 Minute Cake

1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
2 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix (I use this)
1 teaspoon Sugar Free Strawberry Jello Powder, dry
1 scoop Vanilla Protein Powder
Pinch salt
1 - 2 cup Measuring Cup or Microwave Safe Mug

In a measuring cup or microwave safe mug, Mix egg, milk, syrup and oil and combine thoroughly. In a separate bowl, mix pancake mix, Jello powder, protein powder and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes (my microwave is getting old and needs 20 seconds added now.) Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices.

Chicken cordon bleu-ish casserole

Cube up the chicken - use a couple cups
cube up 6-8 oz. swiss cheese (I actually use provolone because I don't like swiss)
dice some deli ham - 4-6 oz.

Put all that in a lightly "pammed" casserole dish and top with 1 can cream of chicken soup.  Mix it together then sprinkle with breadcrumbs (crushed soy crisps also work).

Bake at 350 for 30 minutes or so or until all hot and bubbly.
