Un-officical weigh in again to see if I could hold that 149. No dice! Darn! But, I am still positive it will happen soon. Just waiting for my monthly "friend" to arrive. I usually will lose after it is all said and done!

Blackberry Crumble

3/4 cup berries (measure, then crush a bit) tossed in 3 packets Splenda
(let this sit awhile in fridge)
-------------------------
1 heaping tbsp Fiber Cereal (crush this, fine)
2 tbsp quick oats
butter type spray (no-cal)
Cinnamon
Splenda

Preheat oven to 350 degrees

Put berries in small rammekin. Sprinkle oats and fiber cereal crumbs on top. Spray liberally with "butter spray" and sprinkle with Splenda and cinnamon

Bake 15 minutes. Top with 2 tbsp whipped cream.

Calories: 106
Fat: 1.1g
Carbs: 21.8 g
Protein: 4.5
Fiber: 8.2g

I actually used a little bit of margarine ("I Can't Believe It's Not Lard", or whatever), but butter spray will save you cals as above. This was unbelievably delicious!

Illegal weigh in

Woo Hoo! Ok, I weigh everyday but only log in my Monday weigh-ins. Well, this AM, I get on the scale and weigh thinking I may gain a pound as I did not eat dinner last night.  ( I did not intentionally skip dinner. I was just having a day where food did not look good, smell good or taste good. I even made my famous pot roast and it did not even hold any appeal to me. I ate a few baby carrots but that was all.) That usually equals weight gain in my book. I weighed 149! WOW! Now, the true test will be if I can hold this weight till Monday. If so, then it can be my OFFICIAL Monday weight for next week! WOW! Have I mentioned I love my RNY? I DO!!!!

152 and holding

Weighed in this Monday morning and ta-da...152! The bad news is I got real sick on an old fav last night- powdered donuts and chocolate milk. Mind  you, the chocolate milk was lactose free and 2%, but the donuts...never again. I slimed and wanted to puke for a good couple of hours. Actually thought it would come up- but no! Nothing. So, I ended up rolling around in bed with a severe uspet tummy. So not worth it! I am due to have my TOM and I am praying it comes quick. I never had "PMS with vengance" like I do post WLS. It is horrible!! One month I cannot get enough salt. The next month I want  sweets. I don't remember having cravings this bad ever in my entire adult life. I need to accept it, move past the "trigger" foods, and keep them OUT of my house, and just plain get  over it! Back on track today!

I would love, love, love to get under 150. But, still no dice! I weighed this AM and still weigh 153. Close but not a WINNER yet! And then when I am under 150- I wont be happy till I am 130- vicious cycle! I swear I am a slave to my scale. I weigh daily but try to only post one day out of the week. I was up to 154 right after Easter. Ate candy and felt sick. Gained a pound, and felt even more sick-er with myself and my "old habits". Threw all the candy out and started anew. My daughter is so good- she did not even mind that we did not have a ton of junk and chocolate in the house. She said that she too was sick of it all.

Drum roll please.............I have lost 42% of my body weight though!

I am fighting a bad ear infection and sinus infection. I am taking Bactrim and some other decongestant which make me sick to my tummy. I got two shots. It's all draining and I feel mighty dizzy. I hate this feeling. Hopefully by tomorrow I will be my old self. I really have no appetite.

Chocobanana Monkey Bars

1 cup quick oats
5 scoops chocolate protein (I used Unjury)
1 8 oz jar baby food bananas or 1.5 mashed bananas
1/4 cup egg whites (or two egg whites)
1/3 cup fat free cream cheese
1/2 cup dry nonfat milk powder
2 teaspoons canola oil or olive oil
1 tsp. banana or vanilla extract
3/4 cup Splenda for baking
1/4 c. water
cinnamon

Pre heat oven to 350 degrees

In small bowl, use mixer to combine cream cheese, oil,egg whites, water and bananas. Mix until smooth. Slowly add in protein, dry milk and Splenda. If it's too thick you can add a little more water.

Spread into a greased 9x9 casserole dish. Sprinkle top with some Splenda and cinnamon. Bake at 350 for 20-30 minutes-- bars are done when inserted knife comes out clean.

These are best served warm, actually. I overcooked mine, but warming them made them perk up a bit-- then I schmear a little peanut butter on them and they're happy!

QUESO FRIER with SAUCE


It browns up and melts inside--without having to bread it or dip it in eggs! Two thick slices and 1/4 cup pizza sauce makes a nice snack! Spray your pan with Pam, nuke a little jarred sauce...brown cheese on both sides over low heat---

Cals: 175 (cheese is 80 cals per slice)
Fat: 1.6 g
Carbs: 2.4 carbs
Protein: 12g

HOT DIGGETY DOG ROLLS


I used Ball Park Fat Free Hot Dogs....sliced 2 in half and rolled them inside spring roll wrappers with a half slice of fat free cheddar cheese. Spray cookie sheet with Pam, place doggies on sheet, spray tops as well. Cook at 350 for 25 minutes--- flip 'em at halfway through. Makes four-- and the sliced sugar free bread and butter pickles are calorie free! :)

Pancake recipe:

2 tbsp whole wheat flour
1/4 cup egg beaters
1/4 cup 0% fat greek yogurt
2 packets Splenda
dash of cinnamon

Insides/extras:
1 oz melty white cheese (mozz, farmers, swiss)<-- I need the fat so use full fat, less cals if you use redfat
1 serving lean deli ham or turkey (or half of each)

Heat the meat in a pan and set aside.

Blend flour, eggs and yogurt in your bullet.

Make 4 pancakes in cooking spray... about 4 inches in diameter. Sandwich a slice of cheese and half the ham between two pancakes (makes two sammiches). Drown it in Walden Farms zero cal syrup. Oh My Nommin' Gah! You could also eat one, then put the other in the fridge and nuke it for a breakfast sammich!

Whole recipe (at a year out I can eat it all, plus sausage!)

Curried Lentils
Fiber  1.7g1 bag lentils (sorry I don't know how much they were.  Those slim bags they sell in the store)
1/2 red onion chopped
1/2 c. shredded carrots
4 large button mushrooms, chopped
garlic
extra virgin olive oil
1 tbsp curry powder
Optional 1 tsp red pepper flakes
1 small can chicken broth
about 2 cups water

Directions:

1.  Sautee onions, carrots, and mushrooms in olive oil and garlic until tender.  Add to crock pot.

2.  Add lentils to crockpot and cover with chicken broth, water, curry powder, and red pepper flakes if you choose to add them.  Set on low and simmer for about 4-6 hours.

I ate them with a little brown rice (don't eat rice much but when I do it is SO worth it) but they are fine as a stand alone soup).

Start with a pretty basic post RNY pancake recipe:
 
EGG CREPES:
3 egg whites and one whole egg  (we were out of Egg Beaters)
1/2 cup fat-free ricotta 
4 tbsp whole wheat flour
A small amount - two tablespoons tops - of skim milk, to thin it out (you could use water)
1/2 tsp kosher salt

FILLING: 
Whatever was left of the ricotta - 1 1/2 cups
1/2 package frozen chopped spinach - squeezed dry, dry, dry
6 ounces Perdue chicken (Italian flavor), chopped very fine (processor's good)
A couple of tablespoons Parmesan cheese
1/4 cup 2% mozzerella
sauteed minced onion & garlic and oregano

ALSO:
1.5 cups marinara sauce
2/3 cup 2% mozzarella

Use a saute pan and make 7 very thin pancakes..stack on paper towels to absorb excess moisture as they finish.

Pour 1/2 cup marinara in the bottom of a small casserole dish (9x12"). Put a good sized blob of filling on each "pancake" and roll, place into casserole.
 
Top with more marinara & 2/3 cup 2% mozzerella

Bake @ 350 degrees for 20-30 minutes until golden brown & delicious. 

* Note: egg crepes will not absorb sauce like pasta does, so you may wish to serve with additional sauce on the side.
 

NUTRITION PER SERVING-- Each serving is 2 "manicotti" rolls--

135 calories
4.5 g fat
7 carbs
1.5g fiber
16g protein

Try THAT with your everyday pasta!

TASTY CHEATER MOZZ STICKS!

3 light mozzarella sticks (I used Trader Joe's-- try freezing them first!)
1/4 cup crushed fiber twig cereal (I used Wegmans, but Fiber One's good)
1/8 cup egg beaters (pour a bit more, but this is what'll stick)
1/3 cup pizza sauce (I used Ragu pizza quick)
italian spices-- garlic powder,oregano, etc.

1) Preheat oven to 375 degrees
2) Cut mozz sticks in half
3) Put fiber cereal and spices in bullet and blend until fine
4) Dip cheese pieces in eggs, then cereal mix... do this twice to cover the sticks
5) Spray cookie sheet with PAM. Put on cookie sheet and spray tops lightly
6) Pop pizza sauce in microwave and heat 1 minute
7) Put sticks in oven-- watch 'em, and remove when they start to ooze--  5-10 minutes. 

Seriously, as delicious as the real deal...but hey-- check the figures! 

YIELD 6 PIECES! (Includes pizza sauce!)

Some old habits never die...

I found this out the hard way. I made a cake for a friend of mine and had it around the house for two days. A nibble here,a  piece there. Another piece later, and another bite before bed. Then I weigh in and have gained a pound. Oh well, might as well have that last piece of cake before I throw it out. WRONG! On my way to school, my intestines rebelled! Almost did not make it to school without an "accident"- and not the type involving another car! I had to rush in and go to the bathroom.Nothing like having a poop that leaves you shaking and weak at 7 AM. I have learned my lesson. So, I think this is how I dump- literally! NO MORE CAKE!!! I won't say ever, but definitely for along while.

154 and holding

Ok, it is Monday, what I also know as "Weigh Day"...ok, official weigh day. I weighed in this AM at 154. I am 9-13 pounds away from my goal. I am 24 pounds away from my doc's goal. However, I do feel sknnier and feel like I LOOK skinnier. Maybe it is my body jsut readjusting and shifting the weight around my body.

I saw my twin sister this weekend. She had nothing but nice things to say about my weight and how I am looking. I bought some board shorts for a bathing suit and I am looking to find a top to match. I am still very sensitive about the skin and sagginess of it in my arm and top of thighs. Weird, how before when I was overweight, I wore a tankini and did not care what anyone thought of how I looked. I thought I looked good! My motto was- don't like me, don't look at me. My sister said the board shorts did not look bad. However, I beg to differ. Again, I still see myself as fat. She says I have that body dysmorphia thinking. I think she may be right. I still think I am a size 22/24 when in reality I am a size 10. I love the new me- more energy, no diabetes, highblood pressure or cholesterol, can paint my toes without worrying I will pass out from lack of oxygen when I bend over, wearing jeans that look good on me and not "stretchy" ones, can walk to and from places without wheezing, I dont drive for 30 minutes around HEB parking lot just to get a closer space, and everything else that comes with weight loss. Oh, let's not forget how men are now paying attention to me and looking and talking to me. Whereas before, they totally ignored me. Ok, enough on that subject. I just need to invest in counseling if I cannot get over it.

I just know how lucky and fortuante I am to have this opportunity.
