I take my lunch every day and use a microwave also. I do take some tuna or salmon salad sometimes, but that gets old. I usually take leftovers--and I live alone, so I always have leftovers! I don't know if you are eating beef yet, but I'll take roast and a bit of light mayo. I'll dip the roast in the mayo--I don't do bread yet. If I need to reheat something, I make sure it is in a liquid. Today I have leftover sausage and chicken gumbo (without rice). I won't eat/drink the liquid, but it helps the meat not get tough when reheating.
If he likes seafood, boiled shrimp is easy to take and doesn't need reheating. Same with boiled eggs. I don't like cheese, but if he likes cheese, that might work as well.
I tend to make a couple of stews/casseroles on the weekend and then eat on them all week. I've never had any problems with beef, so I'll make a sugar free barbeque and slow roast beef or pork in it. That becomes my version of pulled pork. I've also made chili, meatloaf (substituting some ground turkey), lamb stew, etc. Again, I think the liquid is the trick when it comes to reheating.
This will be my first summer post-op, so I'm not sure what I'll take that doesn't require heating. Probably the salad fixing minus the lettuce. I use a lot of low-cal recipes and just adjust them to my needs.
For me it is breakfast that is the challenge, so I wish you the best,

There is one in particular with salisbury steak and broccolli that is quite good. I also have had peanut butter crackers, refried beans with cheese, single serving chili and soups (they are nice because they don't need refrigerated), as well as jerky (I found a lowfat ostrich jerky at GNC that has only 80 cal 1.5 g fat and 16g protien per stick)
I burned myself out on cottage cheese, canned chicken & tuna, and mozzzerella sticks when I was newly post-op, but those are a good option, too.
