I know that some people often just make the regular lasagna for their families and then just take out the pasta for themselves....

I personally will often make my lasagna using zucchini slices in place of the pasta/noodles.  The key is to make sure that you slice the zucchini well before assembly and make sure that you give them a good chance to drain as they do contain a ton of water and will make your lasagna soupy if they are not drained.  I sprinkle my slices with salt to help them drain and leave them sitting in a colander.

Making the lasagna like this is sooooo yummy and you really don't miss the noodles!

the zucchini sounds good as a pasta substitute.

I just waited last night til my husband had all the bits ready to assemble for his magnificent lasagna, then stole some of the meat sauce, ricotta and mozzarella and packed them up in little containers for myself!   so it's really just meat sauce and cheese.
   
      weight loss includes 25 lbs before optifast

Late in the day but have to get it in...

B pepperoni cheese omelet
s kashi cereal
L shrimp, asparagus
S more shrimp......I've had a craving all week....yummy
D shrimp, asparagus and triskets
S frozen fruit

Been a very productive day!!!!
Nice and sunny out got yard work, altering clothes and some cooking done...
 Hope everyone had a great one......
