Broth recipes?

I am not much of a cook by any means and I know that the broth you buy at the stores kinda sucks!  When I'm on Optifast I'd love to have a broth that is a bit better tasting than the store brands if possible.

Do any of you chefs out there have any ideas of broth recipes that would work while on optifast?

I make chicken broth quite frequently.  I like to use the carcass of a whole chicken (after we've eaten most of the meat off it, I mean. lol).  I put that in a pot with lots of onions, celery, carrots, salt to taste, a good helping of pepper, a few shots of hot sauce, a little fresh garlic and sage.  Cover it all in water and boil on a slow boil for 2-3 hours.  Taste and adjust salt if needed.  Then I strain it through a mesh sieve (so nothing gets through at all), allow to cool and then scoop off any fat that forms on top of the broth.  Very easy and very tasty.  I've done the exact same with turkey.  I've also done beef (roast beef or steak bones) - skip the sage, add some Montreal steak spice.

This sounds good.  Thanks Karen!   Can you freeze broth?  I can't believe I have to ask this stuff after cooking for my family for years, but none of us are soup eaters, so never really had to worry about it before!

Laura, I went to my local Chinese food restaurant and bought won ton soup broth only.  It really helped my through the Optifast stage.  I also make them like Karen does all the time as a base for soup.  You could also try simmering the heck out of your favourite veggies, a few spices and maybe some garlic and strain to make a tasty veggie broth.  Save the simmered veggies frozen for a hearty homemade soup later.

Good idea with the won ton soup broth!  Probably not very expensive either.  and the best part is that I dont' have to cook it!  LOL
