Morning all :)

Working, of course.  Then...... off to my very first Zumba class!  Very excited!  Are you ready Tobi F.?  And just where in the hell did my weekend go, anyway?

Plan for today:

RNY 5+ years - maintenance

B - coffee with milk x several, protein shake
S - 1 babybel, 2 melba toast
L - leftover casserole concoction from yesterday.  It's quite a mish-mash. lol
S - herbal tea, Kashi bar
D - likely more of the casserole unless Joe eats it all.  If it's gone, 2 scrambled eggs with old cheddar, onions and 1 toast

Have a good one :)

Working this week 8-4.  Love the early shift!  After work it's off to the gym.  Im looking forward to tomorrow night at the gym - Tuesday's they have a class called Hawaiian Dance and I want to try it out.  Im not normally a class person, but this seems interesting.

The weekend went by WAY too quick.  Didnt do much but kept busy around the house.  Lots of cleaning and laundry to get done.  Made the pulled pork and it was DELISH!!!  Simple recipe...pork tenderloin in the slow cooker for 8-10 hours on low, drain the liquids, shred, add BBQ sauce and put back in the slow cooker for another hour.  I used 2 tenderloins and it seems like plenty for the potluck so I popped it in the freezer until then. All I have to do is buy some slider buns and coleslaw to make sammies.

On the menu today:

B: Protein Shake
S: 100g Greek Yogurt
L: Stuffed Mushrooms [made them again last night.  Yummy!  Think Im addicted!]
S: Cactus Pears [2]
S: Extend Bar - after gym
D: Pork Kebab [100g] and 4 asparagus spears

We had a staff member demonstrate Hawaiian dance for us one time at a staff event - it was awesome!! I'd love to try that.  My girlfriend and I took a year of belly dancing a couple of years ago and loved it!

Love pulled pork tenderloin. If you want to make it even better throw it in the slow cooker with some SF Root Beer or Gingerale. So yummy!
Serve with homemade BBQ sauce and coleslaw on a bun.

My head is in a fog again today so will see if I stick to plan or not.  Not much of an appetite the past few days.  I plan on starting my Christmas baking this week so today is take inventory of what I have on hand and what I need to pick up once I make a list of what I am baking.

B - scrambled egg with feta and spinach

S - honey crisp apple

L - 3 oz moose roast and gravy, 1/2 cup green beans

D - fettucine alfredo with chicken and broc

On my way to work this morning, I noted that my neighbour has put up an inflatable Santa, sleigh and reindeer, illuminated Christmas gifts, and other assorted atrocities, on his front lawn.  My dad and I didn't say a word, looked at each other, and cracked the hell up. lol  Soooo... all this to say, get baking woman, Christmas is coming apparently! LOL

We have a neighbor a few doors up that puts up all that inflated **** at Halloween and Christmas.  I just cringe when we drive by.  I have asked those I care about what they would like this year so waiting to get the lists back then I will start.

There's a house around the block from us that covered their *entire* house in lights one year - you could see the glow from my yard! LOL
