" Its the ground chicken recipe from monday, 2 romain lettuce leaves, with 27 g of chicken per leaf + 7 g of Kroger Authentic Mexican Cheese Blend on each leaf, then baked at 350 degrees until the cheese is all gooey and melted.

As a meal 223 calories, 32g of protein, 1g of Carbs, and 9g of Fat.

If I  may say so myself - AWESOME"

I use a low carb tortilla and cut it into wedges. Then I bake them at 350 degrees until crisp. Then just add a little low calrie shredded cheese (I use cabot aged cheddar) bake until cheese melts then add your salsa. I use mission low carb 6 inch whole wheat tortilla they only have 3 grams of net carbs.

You survived what you thought would kill you. Now straighten your crown and go forward like the Queen you are!

Just one word for you -- frico!  Those are cheese crisps made from piling a little shredded cheese on parchment and baking until the little pile crisps into a cracker-like crispy delicious snack!  When I use finely grated cheddar, I get about 8 small crisps out of an ounce of cheese.

Google it, and you'll find recipes for a variety of cheese.  You can also put a little taco meat on them -- or make bigger ones and fold them over something (like an apple corer), so they cool and harden into a little taco shell.

I keep these and the pepperoni crisps on hand for those moments when I need a crunchy snack!

What a good idea! I LOVE cheese, but not the fat and sometimes really miss crunch. This would solve both of those things. (and I have this new toaster oven...)

I didn't read all the responses but like you I loved chips / dips @ mexican rest. and nacho's.

Now, I drop shredded parmesan cheese and heat in microwave for 30sec. They melt flat and get crispy just like a chip.

I think put a little homemade chili and salsa on it.--- I can eat abt 3 and that is my dinner and makes me feel like I had nachos.
