Breakfast???
So I just went back to work last Monday..(was out for 8 weeks) I am having trouble with breakfast. I normally wouldnt eat breakfast...But I do now. Heres the problem...I am up and out of the house by 6:30am...And in work for 7am. I work at a day center for adults who have Mental Retardation...And I dont have time in the morning to sit and eat breakfast. I've been having some wheat thins, or cheese or something. Or a boiled egg...But does anyone have any ideas for breakfast that I could possibly put into my early working schedule?? I dont know if I worded this correctly..But hopefully you got the idea...lol

When I faced that dilemma, I changed my schedule. I went to bed earlier... got up earlier.. and make sure I eat protein for breakfast first. Eggs or egg whites usually. Good Luck.

I got a big box of those Quaker Oats instant oatmeal packets. Just add 1/2 cup of ho****er and stir. I can eat about 1/2 of one and it is very filling. For protein, you can add hot milk instead if you want = 4 grams protein.

In a job like yours, it's still really important to take time for your meals and snacks, not just to fit in breakfast. I agree that you might want to get up a little earlier, or for me, I need things I can take with me and eat in the car sometimes. Some of my favorite car breakfasts:
a Ry-Krisp cracker with a couple of slices of cheese or a tablespoon of peanut butter
a small low-carb tortilla wrapped around scrambled egg with FF cheddar cheese and salsa
a slice of crustless quiche
high protein/low carb muffin (see eggface's recipe)
a cheese stick and an apple (this is when I really don't have time to make something!)
Smart Ones or Lean Pockets breakfast sandwiches in a pinch - I get the ones that are lowest in carbs
hard boiled eggs
a protein smoothie (made with plain yogurt, Splenda, and frozen berries blended with ice cubes, you can add protein powder or make whatever flavor you want with Torani SF syrups)
Or, maybe you can get a break time for a few minutes to eat at work? Some of my preferred work snacks and meals (but not so much in the car) are cottage cheese snack packages, almonds, chees sticks, beef jerky, and plain Greek yogurt flavored with Splenda, Torani syrup, or fruit.
