Protein Pancakes
I experimented yesterday and came up with really good protein pancakes.
1/2 c flour
1/4 c wheat gluten
1 1/2 T baking powder
1 T Splenda
1/4 t salt
2 eggs, beaten
1/2 c milk
2 T oil
Mix dry ingredients together until well blended. Mix eggs, milk and oil together. Mix the two together in small batches until just blended. Cook as you would for pancakes. I made "silver dollar" size pancakes and ate 2 with about a tablespoon or two of SF maple syrup.
Really good.

I have a different and very simple recipe : whole wheat Aunt Jemima pancake mix ( 0.5 grams fat per serving )
an organic egg
real vanilla
a bit of splenda if Ur family likes emsweet
fatfree cottage cheese like 1/2 cup
mix it all up with fat free milk
make em quarter sized ( they spread out to small pancakes ) - i serve with real maple syrup yum ! the protein keeps me from dumping on em and getting hungry an hour later lol ...

How many pancakes did you get out of this recipe? I only see a grand total of about 16g protein and about 60g of carbohydrates in the entire recipe. I would call them carb-cakes :P
The 1/4 cup of wheat gluten has more than that by itself at about 23 grams of protein. There's about 14 grams in the two eggs and then there's the milk. So I'm thinking about 47 grams in the whole recipe which makes 4-6 serviings at about 8-11 grams each. This is a lot more protein than in regular pancakes. Variables are the type of milk you use, the type of flour, the brand of wheat gluten, the size of your eggs. I made silver dollar size because they are still basically a carb, not a substitute for meat. I served these with veggie sausage.These are better for you than what is served at the IHOP or Denny's. Satisfies that craving without blowing the plan. Moderation, as with all things.

You're right - I completely skipped the protein in the wheat gluten. The word protein didn't even enter my brain in conjuntion with the word wheat!
