Sometimes we need a little crunch in our lives. What is your favorite cracker (or other crunchy topping holder) and why (taste, nutritional value, lower carb)? Also, what are your favorite cracker toppings. I've always been partial to Ritz, Wheat Thins and Triskets with cheese or peanut butter on top. However, I had an epiphany last night that sliced cucumbers might make a good cracker substitute - whatcha think? A nice thick cuke slice topped with tuna or salmon salad sounds pretty good to me!

I'm partial to the thin Carrs Table Water crackers with chili ..... of course I'm in this "everything is better with chili" phase... Crackers give me terrible heartburn though.... so only a couple for me!

I love Wasa with low carb peanut butter. That is so awesome! Also love to dip celery, instead of my usual Ritz, in cream cheese with Pickapepper sauce on it. Dang, now I am hungry for that! Kathy 4/1/04 253/237/180/142

Triscuits (garden veggie flavor)...I love the flavor and the really crunchy, non floury taste of it. I do not like 'reg'crackers...they tend to taste paste-like when chewed. My favorite topping is LF sour cream mixed with CHUNKY HOT salsa. YUMMY!! Or Cajun Crab Dip. Pixie 211/114/healthy

I love cucumbers and eat them all the time. I also love to take those little peeled carrots and wrap a slice of lean lunch meat around it and dip it in whatever dip I can find. I've always loved to snack so now I just eat a healthy snack instead of a meal. Kory

Hi Bill, I also love the wheat thins and ritz. I tried low fat ritz wheat crackers and fell in love. They are so good. I had them with soft cheese,(in a can), low fat cream cheese/salsa dip, and seafood salad. mMMMmmm... Cucumber sounds good for a cracker also, whodda thunk huh? God bless, Laury

My grandmother made me some homemade jelly that has splenda in it instead of sugar. She made me peach, blueberry, blackberry, and raspberry. I eat that on a cracker when I have a taste for something sweet! OH SO GOOD!!!!! Otherwise I love cucumbers too. I will tell you something really good with them. Slice them up. Mix up a little shrimp and cream cheese, and put it on top! YUMMMMM! It is SOOOO good!!!

Bill....do you think you could get your Gram to share here recipe for jelly made with Splenda? I love a little PB&J every now and then....I have a ton of great home made strawberry jam in the freezer....but it ain't made with Splenda...so I'm slowly giving it away to the old folks here at the condo....they love it. The SF stuff like Polaners is ok...but I like home made... Thanks....and hugs Charlie

Hehhe it is my grandmother not Bill's She has made me SEVERAL recipes that are SO yummy with Splenda. She is planning on putting out a cookbook that I am helping her write with all my recipes for WLS and planning on selling it. These are recipes that I have come up with along the way these last few months and even a few that I had her try for my grandpa who is diabetic. If you think you might be interested in this huge cookbook let me know. I think she is going to be asking something like $6 each for them on Ebay She has TONS of good stuff! And it is all HOMEMADE from scratch.
