Bread? Flour? Almond Flour? Carbquick?
My new thing has been searching Bariatric friendly recipes on the net. I found quite a few for muffins etc but they are made with this carbquick stuff they say has a bad after taste. Does anyone know if using Almond Flour is acceptable? Does anyone know of any breads or flour types we can use when cooking or making a RNY friendly bread or muffin etc? I want to not get in the rut of eating the same thing every day, I'd like to do some carbwise cooking.

Mike, have you tried any of those flours? I was looking at either the almond or soy or hazelnut i think it said. If you have tried them how did they work with muffins or bread type things and did they taste decent? I know I am a pain and I am sorry but I can't afford to buy more than one and want to see which others feel is better tasting and cooks well.

I really haven't used these much, Elizabeth. I do use a combo of regular white flour with rice flour for the Scottish style shortbread I make at xmas - wonderful stuff. But that's about it. Otherwise I use white flour, cake flour, whole wheat flour, and cornmeal (for some muffins, cornbread of course, buttermilk-cornmeal waffles, etc.) They all work well but you likely have used all those.
Maybe others on the board have experience with almond flour, etc.?

I have a hard time with carbs. Always have. They said on the thyroid support site I joined years ago that there was alot of research done into how diet affects your thyroid disease and they found low carb diets seem to work best with thyroid diseases. Which is me 100%. I even have trouble on weigh****chers because even though I was on program alot was carbs and I still gained. So I am trying to find a new product to use instead of normal flours etc. I'd like to make like a breakfast muffin {I am not a big breakfast person} and also try some other recipes I have found that call for flour. But I want to keep the carbs low so have been searching on different types of flours that can be used.

Unfortunately I have no trouble with carbs, just with self control LOL. We are/were all good cooks and bakers in our family so I'm just trying to avoid doing much baking these days. Mostly shopping, cooking and eating from the outside aisles of the store.
My current addiciton is the Ontario strawberries, all carbs I know but I make myself believe they are better than chocolate cake..... I'm surrounded by wonderful organic family farms, so lucky to get wonderful fruit and veggies for half the year.

Ooooh yes I been eating strawberries ahemmm.. alot .. they go down so nice and taste so fresh. I am not too worried about natural carbs as in fruits that type thing it's carbs through additives or flours, rice etc. Those are what I have problems with. Mind you i Love pasta and rice. Especially rice, i love stir fries then add some rice to them. Sigh lol. I think my trouble has been fast food lmao. When i raised my kids alone when they were young I was a cooking queen. Was firm my kids had to have 3 square meals a day. Then t hey became teens got jobs, no one was home any longer at the same time and we became Fast Food Junkies. Between Graves and that I balooned to a wonderful well ...... alot hahaha. Anyways thanks for the help when I get some of these flours and try them will let you know how it goes.

In it they use Soy flour, (which I haven't found in my little town's grocery stores) Everything in the book is low carb and with spenda. Sometimes the fat content is high, but I guess you can't not have everything healthy. I was going to check out to see if Bulk Barn has soy flour tonight, then hopefully I'll make Low Carb Pizza for Canada Day....

I wonder if Soy flour tastes good. I know I like almonds so know I'd like that but is soy the same as soya vegetarians use? I have had that at least I think it was that and it was squishy gooey chewy stuff I didn't like at all. To me was like chewing a sponge. I guess I can find enough to try. Wonder if like a bulk barn type store would have it.
