At this point I would add the extra can of diced tomatoes. it may be more runny but you will not have the meat so dry. Good Luck I hate when I screw a recipe up. Who knows maybe it will be the best sauce you will ever make.

I don't use my crockpot for any recipes with ground meat exactly for this reason. I find that regardless of the amount of liquid, the texture of the meat becomes really odd. I might just be a fuddy duddy about the meat but it just dries it out regardless of amount of liquid. I hope yours turns out fine.
