I don't use my crockpot for any recipes with ground meat exactly for this reason. I find that regardless of the amount of liquid, the texture of the meat becomes really odd. I might just be a fuddy duddy about the meat but it just dries it out regardless of amount of liquid. I hope yours turns out fine.

I do the same add it at the beginning...it will be fine.
Nah... I put the browned beef or whatever meat in all day. It comes out like "buttah". (ahem... butter)
