What are you eating/doing today? (Sunday)
Rest of the day will be laundry, sorting, and such. Oh, and dishes and then messing up the dishes with cooking. lol
B - coffee with 2 oz milk x several, protein shake
S - 1 small piece of toast with peanut butter and a small drizzle of agave sryup (yum!)
L - BBQ burger from Kirkland, no bun, all the good fixin's
S - iced apple juice, cinnamon syrup in my ice shaver
D - roast beef, gravy, smashed garlic potatoes, mushrooms, onions and a few sprigs of asparagus

Thanks again for your quick responses to my panic...lol....I just hate loss of control ( yeah I know...control freak)....and not being able to walk properly really worried me
So....first thing on the menu today is Gravol as soon as DH gets back....and I suspect that will make me sleep
Going to down a protein shake now so I dont get low sugar....
I will update later

L- Half a fat free ham and cheese wrap with a few cucumber slices on the side
S - Protein Shake
D - 1oz Baked tilapia, 1/2 garden salad with lemon juice, 1 or 2 spoonfuls of baked potatoe
S - a few pieces of fresh fruit, 1/4 cup plain yogurt.
I hope everyone had an enjoyable weekend even if the weather in your area wasn't so nice.
10 slices pancetta or bacon, chopped up (I like the hot pancetta myself)
2 onions, chopped
4 cloves garlic, minced
2 stalks celery, chopped
2 carrots, chopped
1 tsp. dried basil
1 tsp. oregano
1/4 tsp. salt
1 tsp. pepper
1 can white kidney beans, drained and rinsed
4 cups chicken broth
1 large can diced tomatoes
1 bay leaf
3/4 cup pasta (something tiny is nice, like little tiny bowties)
1/4 cup chopped fresh parsley
1/4 cup tomato paste
1/2 cup grated parmesan cheese
In skillet, fry pancetta/bacon over medium-high heat until crisp; transfer to slow cooker.
Drain fat from skillet. Fry onions, garlic, celery, carrots, basil, oregano, salt and pepper over medium heat, stirring occasionally, until onion is softened, about 5 minutes. Scrape into slow cooker.
Mash 1 cup (250 mL) of the beans; add to slow cooker along with remaining beans. Add broth, tomatoes and bay leaf; cover and cook on low for 4 hours or until vegetables are tender.
In pot of boiling salted water, cook pasta until tender but firm, about 8 minutes. Drain and add to slow cooker.
Add parsley and tomato paste; cover and cook on high for 10 minutes or until hot. Discard bay leaf. Sprinkle each serving with Parmesan cheese.
