Oh no gawd Sandy they are so good and easy.

You need a food processor or mandolin as the potatoes need to be sliced real thin.

I then arrange them on parchment paper and brush lightly with olive oil
sprinkle with sea salt

place another layer of parchment paper on top and microwave on high until golden brown. It takes about five minutes in my microwave but times will very depending on the microwave oven.

Remove and let cool on a wire rack.

I have also make these without oil and they turn out fine. I sometimes mist them with vinegar as well. You can season them with whatever spice you fancy at the time.

Please let me know what you think, I love them. Way healthier than store bought and all natural to boot

Good luck Karen although sounds like he is a great guy so it should go well. Tried making banana bread yesterday. One for my husband and daughter and another for me. The sweetners and banana creeated an acid backlash. So no more for me.

l lentil and barley soup
s. protein bar (hope to go biking)
d. chicken I cooked for my daughter who didn't come home for dinner (sign)
s. cheese and crackers

S - 1 Hard Boiled egg
L - 1 oz Chunk Light Tuna (in Water) w/ 1/4 c. 2% Cottage cheese +
     1/4 c. Edamame Beans
D - 1 c. Low Carb Chicken soup (made from recipe) + 30g steamed Spinach +
     1 T Flaxseed

TOTALS:    526 CAL;    20G CARB;    17G FAT;    72G PROT;    12G FIBER

I'm having 1/4c Cream of wheat with cinnamon, yogurt with 25g protein, 1 tsp bran flaks and 8 raspberries.

that's as far as I've gotten.

I suspect I should be writing out my menu's like you guys.

I am going to try that Chicken Salsa thing today ..

Morning Karen, and everyone - good luck with the introductions to your family!  (Actually, I guess it's afternoon now - how time flies!)

Fifth day of Optifast!  I don't have any plans today, really, except getting some housework done.  It's nice and sunny, though, so I should try to get out.  I'm nervous about going anywhere, because I don't want to get stuck anywhere without food.  And I'm also scared of being faced with food I can't have and being too tempted.  I'm having an Optifast shake every 4-5 hours or so, and I have to have a sugar-free, no calorie snack in between or I'll feel like I'm dying of hunger. 

I think what I'll do is convince hubby to go for a nice walk this afternoon to a coffee shop (one that's right near TEGH, actually - it's about a 10-15 minute walk from my place, at least at my current pace), have a tea there, and walk home.  I have to get into walking anyhow.

B - Optifast with almond extract and amaretto SF DV syrup (I seem to have settled on that as my yummilicious combo that I don't get tired of, so for now I'm sticking with it)

S - A combo of SF cherry jello and SF lemon jello (made separately, cut into cubes and having some of each).  Hey, gotta keep it interesting.

L - Optifast - haven't decided what flavour I want yet.  It's just about time to have it, but I'm going to hold off until I finish this post and also finish a little blog post in my profile so that I can stretch it out to 12:30 p.m. before having it.

S - Tea with sweetener at the cafe we walk to

D - Let me think, what will I have?  Oh, I know - Optifast!

S - Some of the nice broth I doctored up yesterday by boiling a couple of boxes with all the cloves from a head of garlic, a few dashes of hot sauce, and Maggi seasoning

Good afternoon gals!

ooooh!! Tea with the folks!! YAY!

We are in sunny Myrtle beach this week! I reeeaaallllllly needed a relaxing break ;) Might go golfing tomorrow but I will see, I'm really just enjoying doing almost nothing ... Went and did a little shopping this weekend and I'm enjoying ALOT of hot tub time!

Today, I am being a little bad!!

B- some fruit loops
S- a candy
S- an apple
L- going to have a ham and cheese croisandwich
D- apparently my m-i-l is making ham, and scalloped taters and I'm not sure what else
S- munchie stuff- probably some cheese and crackers and whatever else gets put out on the table

all liquids and vitamins in.... as well as a grape cooler in the hot tub. it will take me a while to drink it.

Snack: Coffee - Ricotta Fluff

Lunch: Home made cream of cheddar and bacon soup (half and half cream and BUTTER)

Snack: Toast and BP Chia Latte

Dinner: Pork tenderloin, Spaghetti squash, Coleslaw, Green Beans carrots, Quinoa salad

Snack : Greek Yogurt

I am tring a new recipe tonight too with Quinoa.

Ohhh the meeting of the parents!! So serious! I hope it went well.

I went to a wedding in Hamilton yesterday. The food was unbelievable. Hard not to eat everything!! The had appetizers and shots in the receiving line. I'm afraid I had too much to drink and by the end of the night I was trying, and not succeeding, to be sick Ross' friends were amused. I'm mortified. I danced all night and did have fun. And what's nice is how welcoming Ross' friends were and I was told many times that we're perfect for each other...

Today we had my sin's 7th birthday party. My ex and ex-mil in the same room with Ross eek! Didn't have even a bite of cake, but half a grilled cheese :/

So. Today I am taking a rest day from exercise. I ran yesterday morning and dance the night away.....I don't think I could do anything if I tried

Lunch - half a grilled cheese
Banana and peanut butter
And currently my man is making Cajun catfish and BBQ veggies

Holy rambling!! Sorry about that! So tired and yet my fingers won't stop!

Surgery March 23/2011. Completed three full marathons and two half marathons, two half Ironman distances. Completed my first Full Ironman distance (4 km swim, 180 km bike, 42.2 km (full marathon) run) in Muskoka August 30/2015. Next Ironman Lake Placid July 23/2017!
