OMG, is the site really back up and running? Yay!
Good morning :)
My gosh, I was up so early this morning. And now I'm tired and it's only 11 AM. lol Working today then picking up a bottle of wine and heading home for dinner with Bryan. I made the most AWESOME soup last night! It's Coconut Curry Thai Chicken and it is delicious. AND it is all thanks to Sandy (thanks Sandy!) and her lazy soup post. I ate the soup for breakfast and snack this morning and I'll be having it for dinner tonight. lol One of my co-workers is changing positions so we're having a lunch for her today. Pizza. Could we not be a little more creative?!

S - more soup
L - 1 slice of pizza, not sure what else. Bleah.
S - likely just tea
D - uhhh... soup? And 1/2 of a dinner roll with some butter.

Soup sounds good. Glad the site is back up, I was going through withdrawal. Barb if you post you can mention the great weather, it is sunny (but cold) here. LOL

The pork recipe is great but when I worked out the calories it was quite a lot. My husband actually made an Eggbite meat loaf last night for dinner. Was good but again when I worked out the calories it was a lot. Back biking with my bike in the basement on a stand. With these recipes I need some exercise!

LOL. It's break a leg for sure. And well, all the determination in the world won't make my voice prettier!! I just want to be in the show. Not the lead by any means!

Make what? The soup? I posted the recipe on the recipe forum, but here it is!
OMFG Coconut Curry Thai Chicken Soup
WOW, this was GOOD! I made it up in my head while I wrote the shopping list. It’s a “lazy” recipe. YUMMY!
You’ll need:
- Leftover chicken (lots of it, shredded or cut real small) OR… even lazier! The pre-cooked chicken in the meat section (breast meat) (delish, by the way)(you know, the one in the plastic bag type thingy)
- 1 red onion, diced
- 1 green pepper, diced
- 1 bag of stir fry veggies (mine had broccoli, carrots, snow peas)
- 1 can of mushrooms, drained
- 1 Tbs olive oil
- 2 Tbs mild curry paste (I always buy Patak’s)
- 3 Tbs coconut Thai spice (I bought it at Bulk Barn)
- 3 Tbs Knorr chicken stock powder
- 1 can coconut milk (shake it before buying – you want to hear the liquid)
- Enough water to fill the pot
- Lots of black pepper
- Oh! I forgot, 1 TBS of minced garlic in oil (LAZY!)
- A little salt to taste
- 1 40 cent package of Chinese noodles (don’t add the spice pack, no need) (sma**** on the counter with your fist before adding.)
- Chives (fresh or dried)
Put oil in a large pot and heat. Add onion, garlic, and green pepper. Sauté until almost translucent. Add the bag of stir fry veggies. Stir well and sauté. Add canned mushrooms and continue on. Add the curry paste and stir well. Now add the coconut milk. Let this simmer for about 10 minutes. Add the coconut Thai spice from Bulk Barn. Cook for 5 minutes, stirring frequently. Add the chicken stock powder and enough water to fill the pot. Toss in the black pepper and chives. Let this simmer for about 30 minutes. Taste and season with salt if needed. Add cheap crap noodle package, stir it up and let the pot simmer for about an hour and a half. Taste and add more spice or curry paste as desired.
Enjoy! Skip the tiny package of noodles if you want – you won’t miss them. J
