Someone asked me for the SBD quiche cups and I accidentally erased the message so I don't know who to respond to, so here is the link:
http://www.recipezaar.com/281374  The recipe calls for a mix of regular eggs and eggbeaters. To save on fat calories, I use all eggbeaters.

Today's recipe is for a great casserole that you make a day in advance of a brunch and bake the morning of. I thought you all might enjoy it for Easter, as it as easy as anything and very, very yummy. I've altered the original recipe to be more diet friendly, and you'll never know the changes were made!

Baked French Toast

1 loaf firm bread, such as French, cubed into about 1" cubes
1 8 oz light cream cheese
1/4 c sugar free maple syrup
2 1/2 c egg substitute
12 oz evaporated skim milk
1/4 c butter, melted

Spray a 9x13 cake pan with non stick spray and put 1/2 the bread cubes on the bottom. Cut up cream cheese and put on top of this layer of cubes, then top with remaining bread cubes.
Beat egg substitute together with  evaporated skim milk. Add syrup and melted butter. Pour over cubes. Push FRIMLY down with a spatula, cover with plastic wrap and refrigerate overnight

The next morning, remove plastic wrap and bake at 350 degrees for 40 -50 minutes

Serves 10 or so

** I usually sprinkle some frozen berries over the mixture before refrigerating. Makes it super yummy

***** Nutritional analyizer wouldn't let me use sugar free syrup, so the stats here are based on regular maple syrup.

Cals: 162, fat: 7, carbs: 11  protein: 13

celery root soup ( okay, long story, but this is made with pureed cashews to make it creamy, so the fat content is really high, but it monounsaturated fat, so it makes it a litte easier to take the fat grams)

cals: 1225, fat: 46, carbs 125, fiber: 20 protein: 81

Today I am dedicating myself to restarting my food plan.   I've gained a few more lbs. and now is the time to get those off, plus some more.
The tool is still working, I just need to be compliant.

B - wt cont. oatmeal, made with skim milk and a small banana
S - none
L - fish, broccoli
S - SB bar (afternoons are the worst for me wanting to graze)
D - turkey taco salad - small   
S - 1/2 apple

Please Lord let me stick to this plan today!

Yesterday was pretty good.  I felt good about my day.  Today... Hmmm have to work on it.

The recipe sounds easy and yummy. I see so many people eating fish and I just can't make myself eat it. But French Toast - oh yeah!!

My menu is the same as every other day. Need more water today.

Oh, so easy! I'll just pop them into the oven tomorrow morning and while I get ready for work they'll be getting yummy. Gary's taking one to the office, and the other one is going to the salon. Of course, I will have already had breakfast, but since I'll be there for 10 hours, I'm sure I'll have time to grab a bit.

Good morning!
I'm trying to take it a little easier than yesterday so food is going to be a bit different but I'm going to try to keep it healthy....

B- Oatmeal
S- 1/2 apple and some cantaloupe....that's the end of my cantaloupe Susan :-(
L- 1.5 slices Pizza, with  salad (I drank a big cup (16 oz) of water before eating so I would feel fuller)
S- Apple
S- Protein shake w/added fiber
D- something easy like cottage cheese or protein shake

I think I still stayed within my calories/points allotment but definitely had more "bready and fatty" stuff with the pizza.  It certainly isn't the first time and won't be last......I'd just prefer to avoid it right now since I can't workout at all....heck I can barely walk never mind do a workout...LOL

The quiche cups sounds yummy I think I'll give them a try in a week or so.

Just wanted to thank you for todays recipe idea....it's inspired me to try something new tomorrow...I'm going to follow the basics but make a few changes to come with something I think Matthew will enjoy.  It's going to be a sort of baked french toast casserole/pie with lots of raisins, cranberries, walnuts, cinnamon, etc...... I'll let you know if I'm successful.
