I had about 3/4 cup red lentils...put them in about 1.5 cups of water, bring to boil, lower to simmer for 15 minutes or so...in the meantime...1/2 onion chopped up, a container of baby bella's chopped up and 1 tbls butter (I'm not into fake fats or oils...) and 1 tsp salt in a skillet, cook on medium while lentils are cooking...about 10 minutes in, add chopped up broccoli to the top of the lentils to steam for the next 5 minutes while lentils are finishing cooking...grate a cup of sharp chedder...i happened to have about a 1/2 cup pecorino too so i used it too...add 1 crushed close of garlic to onion/muchrooms and a pinch of cayenne pepper, cook for a couple of minutes, add 2/3 cup heavy cream. Your 15 minutes is now up on the lentils/broccoli, drain water, pour lentils/broccoli into a baking dish, add the cream of mushroom soup and cheeses...save a little for the top. Mix together, top with remaining cheese, throw in 375 oven for 30 minutes. YUM.
