Certainly, but I'm missing the point.  Why not make a pie with a pastry crust?

Graham Cracker crusts tend to be "sandy/pasty" not unlike the filling of a pumpkin pie.  IMNSHO, you'd get a better pie by providing the textural contrast in the standard crust or perhaps a shortbread crust.

I plan to alter my usual recipe by using fat free evaporated milk instead of regular evap milk, egg beaters in place of eggs and splenda for the sugar. I may also add a little sf maple syrup.   On top, I will mix my pecans with splenda brown sugar and a little butter.  Possibly add a little sf butterscotch pudding mix to it.  I will leave off the marshmallows this year on half or spoon some into a dish for myself without any.

I bought both quinoa and almond flours...........now...WHAT to do with them?   Any ideas???  I'm not too creative but can follow a good recipe LOL

yeah, I was thinking I could bring my own applesauce and limit my intake.  No sour cream for me, although I could try plain greek yougurt . . .

One bite of anything shouldn't be a deal breaker. the question is,can you stop at one bite or one latke? will it throw you into a carb binge?
Those are the issues I would ask myself about. if I thought I was up to the challenge,I would go for it. The worst that can happen is you might find out that it wasn't the best choice and then you move on.

Other than baked instead of fried or Sweet Potato, I don't think the potato pancake is "bad"

There is probably more to fear in the sour cream. Just enjoy an appropriate amount.

What am I going to do?  We have our annual Latke Extravagenza in 2 weeks and I really want to have some.  Any idea if it would be bad to have a bite?  I'll bring my own no sugar added aplesauce, but does anyone know of any "les bad for you" latke recipies?  thanks
