Topic: Bread machine recipes
Just got a new bread machine and am looking for recipes for high protein low carb bread. I'd like to find a way to add protein powder (or other protein sources???) to make home made bread.

Also - does anyone really make low fat meatloaf in their bread machine?

I'm pre-op, trying to find ways of making things healthier in the house and finding recipes for post op as well.

Hi Tiffany!

Peanut Butter Protein Cookes
1 to 1 1/2 cups natural peanut butter (I use Skippy - no gross oil!)
1 cup splenda
1 egg or 1/3 cup egg beaters
1 scoop vanilla or unflavored protein powder

*Don't forget to put the fork marks in the cookies otherwise they don't bake as good!
*Mix and stick in fridge for 10-15 mins; then bake at 350* for 8-9 minutes. Any longer than that and they get too dry and crumbly. I've also made these with 1 cup oatmeal mixed in and sugar free chocolate chunks - yumm! If you do add some oatmeal in I would suggest to do a little bit more egg, mine came out too dry with just 1 egg


Pumpkin Chocolate Chip Cookies
1 cup canned pumpkin
1 cup splenda
1/2 cup applesauce *I use this instead of vegetable oil, you would never know the difference!
1 egg or egg beaters equivilent
2 cups whole wheat flour *bakes the same as white, you'd never know the difference!
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups sugar free chocolate chips/chunks
1/2 cup chopped walnuts (optional)
1 scoop vanilla/unflavored protein powder

Combine pumpkin, splenda, applesauce, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, protein powder and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
Add vanilla, chocolate chips and nuts.
Drop by spoonful on greased cookie sheet and bake at 350* for approximately 10 minutes or until lightly brown and firm.

Thanks guys! I guess I just wasn't thinking right at all! Nuts, deli meat, string cheese, and tuna are foods I eat a lot of and it didnt even occur to me to take them!

1 small apple
1/2 Tbsp Splenda Brown
Cinnamon to taste
1 6 oz container 0% Greek yogurt

Peel and cut apple into cubes. Place apple in a small, microwavable bowl ans add Splenda Brown & cinnimon. Cover and microwave for 1 1/2-2 minutes. Remove and mix. Add yogurt and mix. I also add vanilla protein powder to this and use it as one of my meals. It's great for work. I make the apple ahead of time and mix it with the yogurt and protein powder when I'm ready to eat it.

Jerkey!!!! at work i basically work out of my car so i have things in there that i can snack on when i feel hungry. I LOVE jack links turkey nugget jerkey.

nuts- i dont go to them often but crunchy salty and they are protein

as the other said if you can bring a small cooler or even insulated lunch box with an ice pack  bring string cheese and deli meats are always good

if you have to stop for food along the way try for a subway or any deli or quick mart like wawa or quick check etc . i order just the insides of the sandwich

in my trunk i also keep a tub of nectar's iced tea protein powder i just pick up a bottle of water while on the road and shake it up and its ready to drink!

in my glove box i keep protein bars for emergencies only tho i dont like to count on them much

tuna pouches are good too

or i have gotten lunchables at mini marts in a pinch. i dont eat the crackers but the turkey and ham and cheese aren't that bad if your stuck its bettern than fast food.

I'm originally from the South and love Fried apples but they're loaded with sugar.  What I do with apples gives you a similar taste though and it's SOOO easy...

Peel and slice the apples (I slice them into about 1/3" slices lengthwise, put them in a microwaveable casserole dish with a lid, add cinnamon and artificial sweetner to taste (I just use about 1/2 pack of sweet & low), cover the dish and microwave for about 4-5 mins depending on the amount and how mushy/crispy you want your apples -- this makes a cinnamony, apple syrup like coating and they are delish.  This would probably work to make apple pie filling but I'm not that adventuresome.

Apples are also good peeled, sliced and cooked with a pork loin roast.

Almonds!!! Yummm!  (Especially the smokehouse variety)

If you can take a small cooler, I'd take some string cheese and sliced ham/turkey.  They'd be easy to eat on the road.

Sugar-Free Sweetened Condensed Milk

1 (12 oz) can evaporated skim milk
1 1/2 c nonfat dry milk powder
1/2 c Splenda

In large bowl, combine all ingredients throroughly. Refrigerate. Will keep for up to one week. Yield: 3.5 cups.
