I am about 3 weeks out. I have trouble with meat also. However chili goes down just fine.

The only way I like it (its mostly a texture thing for me) is to cube it, soak it in Szechuan sauce, and stir fry it with veggies. If I have a small amount of leftover beef or chicken, I usually throw that in as well to help camouflage the tofu.

I haven't eaten meat in about 30 years. I don't like tofu, though. I've tried to like it. It's mostly the texture. Even the firm tofu has a spongy kind of texture I don't like.
