What's on the menu today, RNY-ers?
Hi all,
I got some bad news yesterday and I can't cope with it by stress-eating! It's been a great test of my new tool and my determination. And I'm winning! Here is what is on my menu today. I can't wait to see yours. And special thanks to PetHairMagnet for two delectable recipes in yesterday's post. Now I'm craving the crab and mushroom dish!
Time since surgery: 7 weeks and 2 days (it's really such a distant memory at this point!)
B: 3 mini egg bites with red and yellow peppers, shallots, deli turkey, lite Mexican cheese
L: 3 Oz of the never-ending turkey chili
S: Weigh****chers jalapeño cheese stick (50 calories and 5 g of protein!)
D: it's my stepdads birthday and he wants to go to PF Changs. I will have some chicken lettuce wraps (minus the lettuce) and seared tuna appetizer.
I just did 40 minutes on the treadmill. Today should end up at 622 calories, 19 g of fat, 44 g of carbs (too high-that damn turkey chili!) and 80 g of protein.
Time since surgery: 5 1/2 months
B: 2 oz. chicken cutlet breded and fried ( i know i know but fried is never often anymore)
L: Small Salad with 1 egg and 2 oz. chicken cutlet
S: handful of yogurt covered raisins
D: Not 100% sure but probably 2 tablespoons spanish style rice and yes another 2 oz. chicken cutlet.
All my chicken cutlet will be done and i will move on to something else tomorrow.

10 & 1/2 months post op
B: 1 egg ommlette with deli ham, Colby Jack cheese, & roasted red pepper & onion. (I used the rest of the "stuffing" for mini quiches for the rest of the week.
S: cheese stick & 1/2 ounce almonds
L: cottage cheese and pineapple
D: homemade meatballs with moz. Hopefully I'll have room for some sautéed yellow squash.
S: probably some peach Greek yogurt
4 months out
B- Crustless spinach and ricotta quiche
s- 1 oz low fat jalapeño cheddar cheese
L- Ham and low fat provolone roll up with Dijon mustard
D- beef stew (just the beef and a few baby carrots-skipping the potatoes)
S- Boom Chicka Pop popcorn (1 cup=35 calories) with a sprinkle of Parmesan cheese and warmed in microwave - yumm!
exercise- meeting with a trainer for first time (yikes)
Sorry to hear that you are stressed but you are handling it correctly rather than stress eating. I too suffer from that reaction to stress.
B/L: 3 oz chicken, ounce humus, ounce spinach
D: 3 oz salmon, ounce spinach
calories: 556, fat: 25.5, carbs: 27, fiber: 9, protein: 58
