How far out from surgery are you? Your body has the ability to store some types of vitamins, so you can go for a while before you use up those reserves.
My other question would be about how comprehensive your lab work is. Some doctors check only the basics (and a few don't even do that!), but not all of the things we are at risk for developing deficiencies in. What all are you having checked? Iron, ferritin, TSH, calcium, Protein, Vit D, Vit A, Vit K, magnesium, potassium, zinc, B1 (thiamin), B12, B9 (folic acid)? This is pretty much the basic list (although I might be forgetting something).
Also, have you had a DEXA scan to check for bone loss? The blood calcium level doesn't tell you anything except that -- if you aren't taking in enough calcium -- your body is doing a good job of pulling it from your bones, etc. (because your heart MUST have it), so just because your calcium level is ok does NOT mean you are getting enough calcium.

Why don't you take vitamins???? Why risk it? What happens in 6 months when you post that they are all in crapper?
There is no reason for people to have this surgery and not make the commitment to supplement. You can get a supply of generic multi vitamins for less than $10 --- nothing that we should be taking is cost prohibitive.
Don't jeopardize your health. Just because they are normal now -- doesn't mean they always will be.
