Delicious enchilada recipe, good for puree and soft diet too!

I thought I should share this here too :) 

 

This is a recipe my husband created for tortilla free enchiladas. It is delicious and got me through the puree stage and now through the soft stage :) So delicious!! Tastes like genuine mexican food.  I call them skinchiladas, not because they are made with skin though lol Skinny enchiladas!

SKINCHILADAS


Ingredients
? 1 can of green enchilada sauce
? 1 small and 1 big can of green chilis or 3 small cans
? 1.5-2lbs shredded chicken
? 2 tablespoons of minced garlic
? 1 bag of reduced fat Sargento Mexican cheese
? 2 bell peppers
? 1 onion


Instructions
1. Preheat the oven to 375 degrees
2. Spice chicken with chili powder, garlic salt and nature seasoning
3. Cook at 375 degrees for 30 minutes
4. Take chicken out, but leave the oven on
5. Chop and dice onion then sauté with a little olive oil, add the minced garlic when the onions are almost done
6. Chop and dice bell peppers and sauté the same way
7. Shred chicken (use two forks to pull it apart) and put in the casserole dish with the cooked onions, bell peppers, and add the cans of green chilis
8. Add half of the bag of cheese
9. Add ¼ of a can of Enchilada sauce and mix contents
10.Pour over more enchilada sauce, until half of the sauce in the can is remaining
11.Sprinkle remaining cheese on top
12.Cover the dish with aluminum foil
13.Cook for 30 minutes at 375 degrees
14.Remove the foil and cook for an additional 25 minutes

Me thinks I am going to throw all of the ingredients except the cheese in the Instant Pot, cook, then add cheese. Lazy chic version! Looks tasty, thanks for sharing!

Hi! This sounds fantastic. But quick question.... I'm probably being completely obtuse.... How did this work for the purée stage? Did you just put it in the blender?

Yeah, in a food processor. :)

Hey I made this last night and it was quite good. I poached the chicken instead of baking and used a red bell pepper. Made a smaller amount but it worked well.  tonight with the leftovers i may add a blob of gy for sour cream.  

So here is a recipe to share with you:

Asparagus Roll Ups.

Get some good quality deli turkey slices - not too thin. Steam some asparagus.  Roll up the asparagus spear in a slice of turkey and put a little stick of cheese or shredded cheese in with the asparagus.  Nuke until warm.  Two or three of these make a good bariatric meal. Can be done with lean ham or roast beef.

Yeah my recipe makes a lot, but its for my family too :P I usually eat it for dinner, lunch the next day, dinner the next day, and lunch the day after :P I am glad you enjoyed it. 

 

I will definitely try the asparagus roll ups!! How tasty sounding!
