What's Cooking - Recipes/New Food Finds
I haven't done this in a couple of weeks so it might be time to post again. Even if you are Pre-Op or newly Post-Op, join in and tell us any great finds you have made. I love trying new recipes when I can find the time and they have to be pretty easy for me. I did a couple this week and here they are:
Cheesy Zucchini(I got this from http://www.howdoesshe.com/zucchini-coming-out-your-ears
I used two small zucchini squash.
Put about a teaspoon of butter(I used I can't believe its not butter) into your frying pan, more or less depending on how much zucchini you use. Grate the zucchini into the pan(peeling and all, I just washed mine off and cut the ends off) and cook at a medium temperature. Stir occasionally. It will get soft and mushy.
I added about 1/4 cup of grated parmesean cheese and about 1/2 cup of medium sharp cheddar cheese to it. Melt the cheese and it is ready!! So simple and so delicious - DH was eating it out of the pan and he usually does not even try my experiments. I think even my granddaughters would like this because of the cheese.
Carbquik Quick Cinnamon Rolls - this one is a little harder
1 2/3 cup Carbquik(you can use Atkins flour - but I don't like it as much)
1 Tbls Splenda
1/2 cup low-carb milk (or 1/4 cup cream & 1/4 cup water)
1/2 cup softened butter ( I don't use a full 1/2 cup and use I can't believe it's not butter)
1/4 cup brown sugar substitute
3 tsp cinnamon
1/2 cup nuts (Optional- I usually don't put these in)
In a bowl combine Carbquik, 1 tbls splenda and mil****il moist. Let sit one minute. Stir again until well combined(I do it with my hands-it is sticky). Sprinkle some Carbquik on a kneading surface or wax paper, turn dough onto surface. Knead for 3-4 minutes(doesn't usually take this long) Roll into a rectangle shape. Spread the softened butter over the entire rectangle. Mix brown sugar substitute and cinnamon together sprinkle this on top. Roll up lengthwise and slice into parts - it says 6-8 but I usually have double that because I make mine smaller.
Bake at 400 degrees for 15-20 minutes - Watch it closely because it if overcooks they are terrible.
I use the Laughing Cow Cinnamon Cream cheese as the topping, but there any cream cheese topping would do. Enjoy.
The other thing I tried last night was an Egg, Cheese Cauliflower Frittata. I've never made a Frittata before and I thought I would probably make a mess, but it was pretty good and not too hard. I got the instructions at: http://lowcarbdiets.about.com/od/cooking/ht/howtofrittata.htm
I grated the cauliflower and onion and put it in the oil and cooked until done on very low heat. Then I followed the rest of the frittata instructions. You can make it with any meat/veggie that you want to use. I will warn you if eggs are not your friend, you might have problems with this. They egg does get done and I could not eat very much of it.
