These are Awesome!  They turn out so fluffy and have everyone loves them that comes to my house. I don't put the chives or spices in them.  I use 10 pounds of potatoes so I have to adjust everything.

Mashed Potatoes in Advance

5 or 6 potatoes

½ c. ho****er

2 T. butter

¼ c. milk

1 – 3 oz. cream cheese

¾ c. sour cream

1 T. chopped chives

½ tsp. garlic salt

1 tsp. paprika

Microwave potatoes & water in 2 qt. flat casserole covered about 15 min. on high (May be done usual way)

Drain – Mash beat in milk, cream cheese, sour cream, chives and garlic salt.  Cover and refrig. until time to serve.  Microwave covered 8 to 10 minutes at med. High.  Serve garnished with paprika.  It will serve 6 to 8 people.

Potatoes can be made and mashed the way you usually do.  Do not put as much milk in the potatoes, they should look stiff, then add cream cheese and sour cream, if you feel after you added the cream cheese and sour cream that it needs more milk, then add it.  You do not need to add chives, garlic salt and paprika.

I always do Thanksgiving at my house, but we are having a smaller group this year.  Just around 12-14.  My parents aren't coming up from Florida and DS and his family go to DIL's families for Thanksgiving.

I do a lot of my cooking tomorrow and only what I have to on Thursday morning.  Ham will be cooked and cut tomorrow.  Cornbread and chicken cooked for dressing and everything will be cut up that I put in it.  Deviled eggs done.  I had to go to the grocery store when we got home today.  I have everything but my ham.  I get it at a local meat market - he has the best ham - he was out, but said he would have me one in the morning around 10 so I'll have to run and pick that up. Luckily it is about 2 miles from my house.

I like your approach to it though!!
