Lin - great idea! I love salsa - but may think about the low fat refried beans and salsa. that was a staple for me post surgery

I love the ideas for adding beans and subbing in eggplant, cauliflower, or spaghetti squash for the macaroni. Quinoa could work, too, although it would be higher in carbs than veggies. As for the cheese, maybe go with a higher protein, lower fat option like Unjury Protein'd cheese sauce?
My daughter uses quinoa a lot in her cooking - may be an option.
I did not know Unjury had a cheese sauce... may need to look into that
